I express my opinion about chaos being non ideological and how that's relevant. I got a little testy when you suggested it wasn't relevant. It happens.

Pan seared duck breast in a blackberry / red wine reduction sauce with duck fat fried potatoes and green beans / julienned carrots.

Dessert is a sliced red wine poached pear with a mulled wine reduction syrup and whipped cream. There are a couple of blackberries on there too.

Dam, this thread fell off page 1 in a hurry. Apparently none of youse dullbots is interested in the highly concentrated and extreme energy fuel us carbon (and water!) based lifeforms need to function.

For those who are interested, but are maybe too shy to do more than make a quick peek; if you've never had duck before this is a great way to fix it and make it taste so good you wonder why you've never tried it before.

The duck is just seasoned with salt & pepper before pan searing. Score skin in a crosshatch pattern. Skin side down to start in a COLD pan. No oil. Heat over medium low. The meat will stick until it's crispy then release. If it needs a bit of a nudge to let go that's fine but don't pull it off the pan. Flip and repeat. Poke with your tongs to judge doneness, you want it med rare so it should be a bit rubbery and bouncy. Meat that is well done is stiff so stop cooking before you get to that point. You can use a meat thermometer if you want to. 135* is where you want it in the center of the thickest part of the meat. Remove and let rest while you make the sauce.

Pour off the accumulated fat before making the sauce. Sauce is chicken stock to deglaze the pan. Add fresh blackberries or raspberries and cook to reduce the stock. Smash the berries to release the juice, this gets easier as they cook so if the berries resist, let them cook more. After the stock reduces, add wine (any wine including 2 buck Chuck will work) and reduce by 2/3's. When it's thickened, strain to remove seeds and return to pan. Off the heat add a lump of unsalted butter and stir to incorporate and emulsify the sauce. Sauce should be smooth and glossy.

The pears are poached the day before because they have to rest overnight in the poaching liquid to turn red. Peel, remove bottom stem, and put into the liquid - red wine, sugar, cinnamon, cloves, and some citrus juice. You can add water to the mix to increase volume if necessary but not too much.

Bring liquid to a simmer and place pears in pan. Poach for about 30 minutes, rolling pears to be sure that all sides are cooked. Pears are done when fork tender in thickest part. Remove form heat and cool, transferring to a sealed container before refrigerating overnight. Pears will go from dull sand color to dark red as they soak. Roll them over in the morning so all sides are submerged in the wine.

Before serving, remove pears from the wine into another container and keep refrigerated. Pour liquid into sauce pan and reduce until it's a thick syrup. Cool before drizzling over pears. If it's too thick, add some water and barely heat while stirring until it's smooth and thin enough to form a thin string from the spoon.

Sounds like someone is butt hurt that the dumpster behind Mickey D's where he forages for food didn't cough up anything equally yummy.
 
Tandoori Chicken kabob, roasted kabob of onions, cherry tomatoes, and sweet peppers, saffron rice with sweet pepper and parsley garnish. Dessert is lemon cake with whipped cream on the side.

Brats slow cooked in beer, then put on the grill to finish them with grill marks and crisp them up. Beans done up with brown sugar and smoked thick cut bacon bits.
