What's for Dinner!

Hi, everyone. I found a recipe on Pinterest for Spanish chicken with chorizo and potatoes the other day and knew I had to try it. Getting Spanish chorizo here isn't accomplished very easily; so I adapted the recipe using andoullie sausage. My suggestion is that if you can't find Spanish chorizo, then use authentic andouille and not the kind that Johnsonville markets. I found a brand called, MANDA and it was a very nice substitute.

If I weren't having homemade spaghetti, I'd jump all over that dinner!
 
Bacalao (cod fish, Spanish/Portuguese style....in a really light olive oil and tomato base with onion, green peppers, garlic, roasted red peppers, and thinly sliced potatos....) served over steamed white rice.

yes, sir. it was very good....even though i really wanted to use chorizo, the andouille came through like a champion. i didn't spend much on the ingredients, either. i can send you the recipe if you're interested.
