baked taquitos

hello, everyone. this is actually lunch and dinner for me, but i made taquitos for the first time. i will admit that i've had the frozen ones on occasion, but now that i've made my own - i don't think i can go back to the freezer section. these can easily be fried, but i prefer mine baked. these can also be made in large batches and frozen; served with refried beans, mexican rice, salsa and sour cream, it's an easy weeknight meal.

for my first time, these taquitos were pretty awesome. fresh ingredients really make the difference.
