What's your favourtie cheese?

Dubliner's Cottage Cheddar with a crisp apple

Gorgonzola on a salad or melted over a filet mignon

a bowl of crusty bread with the center cut out and filled with a smooth brie and broiled just till it bubbles
 
There is a cheese factory in Bandon Oregon where you can get fresh cheese curds.

I went there a few years ago when I was visiting Coos Bay.

You can walk in to the store attached to the factory and get samples of the most recent batch.

Heavenly.
 
I remembered the cheese I liked...it's Finnish...Gjetost. It's almost like a carmel tasting cheese...wish I had some now.
 
Sharp cheddar is my absolute favorite. But I also love many other kinds of Italian and Mexican cheeses, as well as Swiss.

I had not looked at this thread since the first page. Mab., I agree with Quilty about feta. Sher, if it's gooey it's crap.

My best (and longest lasting) husband was Greek so I know feta. I love it alone with only good bread, tomatoes and olives on the side. My middle-eastern deli has a variety of fetas including Bulgarian and French. I think the same person makes them all and presume the labels have to do with taste and texture for that's how I differentiate them. The French is too soft and bland for me, my preference is Greek or Bulgarian.

I always ask for some brine when I buy it so it doesn't dry out. If you can't get brine store it in very salty water.

Lots of favourites, depends on how I'm eating, what I'm eating with it.

As a true blue Brit, a good, strong mature cheddar, with home done pickled onions, home made tomato chutney and freshly made bread.

For a light summer snack, biscuits and a rich Dolcelatte.

In a salad.........crumbled mozzarella, and coarsely chunked applewood smoked cheddar.

No particular favourite, different tastes for different occasions.

Mat (hungry now, dammit, but I cannot eat cheese at 10.30 at night. I'll never sleep.)

Abs, I'm surpriesd at you. I would have thought you would have said Velveeta. :p

Actually, I've had cheese in a tin. It was a really matured kind of cheddar that was kind of spreadable but very delicious.
