Great Pittsburgh Steelers Party Appetizer!

Cucumber Logs Filled with Black & Gold Hummus

2 cucumbers
1 15 oz. can of chick peas rinsed
1 T. olive oil
1 T. water
1/3 c. fresh lemon juice
1 tsp. salt
1/4 c. diced black olives

Cut off ends of cucumbers. Cut each crossways into 6 rounds and turn pieces so they are flat. Scoop seeds out. In a food processer or blender, make hummus by blending chickpeas water, lemon, olive oil and salt...adding more water for desired "creaminess". Stir in black olives and spoon mixture into cucumber logs.

:)

For Christmas...sprinkle with chopped pimento or diced red pepper.
 
Bean Salad

Here is my favorite Bean Salad! It keeps well and gets more delicious each day it marinates!

Bean Salad

*Note: Drain, rinse & drain all the beans.

2 cans French Cut Green Beans
1 can ea: Lima Beans, Wax Beans, Red Kidney Beans & Chick Peas
1 Red Onion sliced deli thin
1 Green Pepper thinly sliced in rings

Dressing

1/2 cup ea: Canola oil, red wine vinegar, sugar
1 tsp. salt
2 T. Dijon Mustard
1/2 tsp. dry tarragon
1/2 tsp. dry basil
2 T. dry parsley

Mix all ingredients and marinate overnight or for several hours stirring occasionally.

Before serving stir and drain some of the liquid off (can be saved for dressing on another salad).

Delicious!!!

quick and easy

Strawberry and Chicken Salad

1 pkg. (10 oz.) romaine salad greens or 8 cups torn romaine
1 pkg. (6 oz.) Louis Rich Oven Roasted Chicken Breast Cuts
1 can (15 oz.) mandarin orange segments, drained
2 cups sliced strawberries
½ medium red onion, sliced
½ cup Planters sliced almonds
½ cup Creamy Poppy Seed Dressing

1. Toss romaine in a large bowl with the chicken cuts, mandarin oranges, strawberries, and onion.

2. Sprinkle with almonds.

3. Serve with dressing.

Makes 4 servings.

NOTE

For added flavor, caramelize the almonds. Heat almonds and 3 tablespoons sugar in a nonstick skillet on medium-high heat for several minutes or until sugar is golden brown; stir frequently. Spread almonds into a thin layer on baking sheet or wax paper; cool. Break into small pieces.

You can also make this from leftover roasted chicken. It's just something easy and fast with already packaged ingredients.

Watermelon and Sweet Red Onion Salad

Dressing
6 tablespoons raspberry essence (see recipe)
¼ cup raspberry vinegar
2 tablespoons finely minced shallots
1 tablespoon honey
¼ cup safflower oil
1 tablespoon Asian chile sauce
¼ teaspoon salt

Salad

2 medium red onions
2 bunches watercress
3 pounds fresh watermelon, both red and yellow
¼ cup fresh mint leaves
fresh raspberries, blueberries, & blackberries


1. In a medium bowl, combine all the dressing ingredients, then taste and adjust the seasonings.

2. Peel the onions , then cut into 1/8 inch slices and separate into individual rings.

3. Toss the onions with the salad dressing and marinate for 2 hours in the refrigerator, turning over every 30 minutes.

4. Remove and discard the woody stems from the watercress, then refrigerate the sprigs.

5. Cut enough watermelon into 1-to-2-inch cubes, rectangles, triangles, or other shapes, knocking away the seeds, to yield 8 cups.

6. Cut the mint leaves into shreds and set aside. Note: This recipe can be completed to this point up to 8 hours ahead.

7. Just before serving, arrange a bed of watercress on six chilled plates—or a single platter—and top with the watermelon.

8. Arrange the onions attractively on top.

9. Drizzle the dressing over the melon and onions.

10. Garnish with mint and fresh berries; serve immediately.
 
Steak Salad with Blue Cheese Dressing

¾ cup buttermilk, well shaken
¼ cup crumbled blue cheese
½ teaspoon Worcestershire sauce
1/8 teaspoon Tabasco
1 piece (3/4 lb) rare roast beef from the deli section
4 small heads Bibb lettuce, halved lengthwise, or 2 small heads Boston lettuce, quartered lengthwise
¼ cup toasted pecan halves, coarsely chopped
¼ cup sliced red onion

1. Stir together the butter milk, blue cheese, Worcestershire sauce, and Tabasco sauce in a small bowl; salt and pepper to taste.

2. Cut roast beef crosswise into ¼-inch-thick slices and divide with lettuce evenly among 4 serving plates.

3. Drizzle with dressing and sprinkle with pecans and onions.

4. Serve immediately.

8 teaspoons wasabi-flavored mayonnaise, divided
3 ounces smoked salmon, cut into eight 1-inch wide strips
8 cilantro sprigs
4 radishes, finely minced

1. Using a vegetable peeler, cut the cucumber lengthwise into 8 slices.

2. Spread each cucumber slice with 1 teaspoon wasabi-flavored mayonnaise.

3. Top the cucumber slices with smoked salmon slices.

4. Place 1 sprig of cilantro and chopped radish on one end of each slice.

5. Roll the slices up lengthwise and secure with a toothpick.

6. Garnish with additional wasabi-flavored mayonnaise, cilantro leaves, and radishes if desired.

Oh MY........I love cukes, smoked salmon, cilantro, mayo and radishes...not had the flavor of wasabi that I recall....but jees this sounds declicious, Saro!

Yes, actually. I have more time to cook in the summers though because I'm either not teaching or teaching only one class.

I used to cook quite a bit more than I do now...I been getting back to basic, simple, tasty, keeps well, versitility! :)

I cook, and particularly bake, a lot less than I used to. I don't have the stamina anymore to spend hours in the kitchen.

This is a very easy chocolate cake. I don't even take the mixer out for this one. And it doesn't need frosting.

DOUBLE CHOCOLATE SNACK CAKE

1 2/3 cups flour
1 cup packed brown sugar
1/4 cup cocoa
1 tsp. baking soda
1/4 tsp salt
1 cup water
1/3 cup vegetable oil
1 tsp. vinegar
3/4 tsp. vanilla (or sometimes I use mint extract)
1/2 cup semi-sweet chocolate chips

Heat oven to 350. Grease and flour 8-in. square pan. In small bowl,
combine flour, sugar, cocoa, baking soda and salt. Add water, oil,
vinegar, and vanilla; beat until smooth. Pour into prepared pan.
Sprinkle chocolate chips over top. Bake 35 to 40 minute. Cool in pan on
wire rack. Cut into squares.
 
CHEESECAKE SWIRL BROWNIES

1 20 to 23 oz. pkg. brownie mix
1 8-oz. pkg cream cheese, softened
1/2 tsp. vanilla
1/3 cup sugar
1 egg

Prepare brownie mix as directed on pkg. Combine cream cheese and sugar,
mixing until well blended. Blend in egg and vanilla. Reserve 1/2 cup of
batter; spread remaining batter in greased 13x9 pan. Cover with cream
cheese mixture; spoon on reserved batter. Cut through batter with knife
several times for marble effect. Bake at 350 for 35 to 40 minutes, or
until cream cheese is lightly browned. Cool; cut into squares.

Is this cake very sweet?

I am looking for a recipe for a dense, moist, moderately sweet, double chocolate cake. I've tasted these but don't have a recipe. I like it plain (no icing) with a glass of milk or perhaps a bit of vanilla ice cream. I find that most cakes are way too sweet for me anymore!

It's not overly sweet as I recall, poppy. But it's not real dense either. I like it because it's A. easy and B. it packs well in lunches.

You could probably reduce the sugar by a 1/4 cup without affecting the quality of the final product.

I'm with you--I'd rather have mine plain.
 
can anyone help me? i need an italian grilled chicken recipie that will go well tossed in the vodka cream pasta i posted on the first page. my boyfriend has really wanted me to do this, but i want to make it right, and to compliment the pasta well of course, but i'm still pretty young and don't know a whole lot about seasonings, how to throw things together and whatnot. thank you so much!

also... how do you cook a bomb-ass steak. i can cook a good steak, but i want to make an AWESOME steak...
