You might find some yummy stuff here , Cate. I use Splenda sparingly, but a lot can be done with it and cocoa powder. I use Splenda and skim evaporated milk (plus extra spices) for pumpkin pie filling as well, and really don't miss the sugar or extra fat. Without pie crust (which I don't care for anyway), it makes for a pretty healthy, filling, and delicious breakfast, snack or dessert.Cathleen said:If anyone cares to share some low carb recipes, I'd be appreciative. A family friend also mentioned using Sugar-Free Pudding mix in all sorts of things like cake, frosting, and cookies. She actually wrote a cookbook after her hubby had angioplasty with all of the substitutions and techniques. If I can get my hands on a copy next weekend, I'll send you any suitable recipes.
