With the price of eggs being what they are...I started experimenting. I read somewhere applesauce could be used in place of eggs for binding ingredients in baking. My banana bread is actually better. 1/4 cup per egg. The chocolate chip cookies were good too. The meatballs worked...but they were more fragile than i hoped.

Depending on what you are cooking, I use corn starch or tapioca flout to thicken and hold foods together.

I use finely shredded zucchini or a few dollops of yogurt in meatballs instead of eggs, have for years. Both give great moisture, the zucchini adds veg and the yogurt adds protein. Neither one harms the flavor. If the meat mixture ends up too loose I add a few breadcrumbs or finely shredded parmesan cheese.
 
Another tasty and delicious easy recipe is @Trubbycat’s Salmon with salsa. Broiled so you don’t even need to start the bbq. Serve it with a side of rice and green beans and you are good to go!

This vegetarian “lobster” roll is a no cook easy and delicious recipe. Perfect if you’ve got s shellfish allergy(like me) or if you just don’t eat or have lobster available. You can substitute vegan Mayo and you’ll have an animal product free sandwich!
