Such a great reminder!With the price of eggs being what they are...I started experimenting. I read somewhere applesauce could be used in place of eggs for binding ingredients in baking. My banana bread is actually better. 1/4 cup per egg. The chocolate chip cookies were good too. The meatballs worked...but they were more fragile than i hoped.

Depending on what you are cooking, I use corn starch or tapioca flout to thicken and hold foods together.With the price of eggs being what they are...I started experimenting. Maple ice cream with my own true maple syrup
Stir fry orange ginger chicken with peppers, onions ad celery served over brown rice. Fun and easy to make.

I would be interested if someone not vegetarian has tried this?This vegetarian “lobster” roll is a no cook easy and delicious recipe. Perfect if you’ve got s shellfish allergy(like me) or if you just don’t eat or have lobster available. You can substitute vegan Mayo and you’ll have an animal product free sandwich!
