Let’s have dinner!

Time for a question two people might answer!

From youtube and the Food Network to grandmothers and home ec programs, everyone starts somewhere.
Where did you learn most of your food and cooking knowledge?
My mom is a really good cook and always interested in learning new things so she used to take various cooking classes. I’ve learned the most from her, old school PBS cooking shows (America’s Test Kitchen/Jaques Pepin anyone?), and just trial and error.

My big challenge now is meal planning and finding things everyone likes without repeating the same few meals over and over.

Hard to pinpoint any one source. Most of what I know about baking is from my mom and grandmother. But for just cooking everyday dinners and things... I mostly just collected tasty-looking recipes and tried not to screw them up too bad. I know my way around the kitchen pretty well now, but I still have to check recipes for things like oven temps and cooking times.

Cookbooks mostly. I stayed home with the kids so I was kinda forced to learn how to cook. After a while, I became pretty good at what ingredients go well together and which ones dont

My husband is amazing at the grill but he'll burn water in the kitchen. 🤣

I can grill....but why? Other than kababs I can do better inside. Want a tender steak? Or pork chop? Cast iron baby. Sear that fucker on one side then transfer it to a 450 oven. Use your finger to press on the meat to tell degree of doneness. Most people over cook meat. Only chicken needs to be done.

New day, new question!
What is a dish you always wanted to make from scratch but either don't have the confidence, time, skill, or have dietary restrictions and therefore haven't attempted?

I like lunchmeat, mustard, and Costco croissants, which are big enough that one croissant can be split to make a roughly triangular sandwich. With key lime pie.

This one is easy. I mostly cook Mexican or Salvadorean meals because that's what we usually like. My husband makes his own homemade burger patties, sausages, etc.... but the one dish? Turkey... Like Thanksgiving turkey. I try every year and each year it's either overcooked and dry or it looks amazing, most, but... Bland. I've tried all sorts of seasoning, brine, etc.... but it's always lacking something. My family and friends say otherwise, but to me? It's just not good enough.

Turkey is hard because it’s gross 😂

I’ve never made it but my mom used Martha Stewart’s recipe and method and it worked well. For turkey.
We're a mess here. Mexican food all year long. Burgers, brats, steak during the summer, with tacos in between. But Thanksgiving is the one time I want to make a traditional turkey dinner. All the sides are easy and I love them. But that stupid bird kills me. 😂

Rouladen intimidates me. I always look forward to when the local tavern rolls out their Oktoberfest menu every year, because they do German food pretty well. I always get the rouladen at least once.

I hate turkey...it is hard to pull off to a standard that I say....yea....that's good. Deep frying results in the juiciest in my opinion....but flavor is totally dependent on the brine. And since I don't measure shit...turkey flavor varies too much. Simply not worth the cost of the oil in my opinion.

I have also taken 2 sticks softened butter and mash in a bunch of rosemary and thyme and push it under the skin of the breast. Then I toss it in one of those cooking bags. It is ok...but I need a good gravy to make it even worth my time. I rather eat cheese and pickles and pecan pie.

I want to figure out how to make better curry dishes. There was this dive on High Street across from the Ohio State University...next to Burritos as Big as Your Head...and their yellow curry chicken was the best. I have spent 40 years trying to replicate it. Curry...is a mixture of so many spices. This shit was so aromatic.

I wish I could do bread. Sourdough. Rolls. Anything. The whole idea of it is overwhelming. Feeding a starter. Worrying about it. I don’t want to deal with it but I want the end result.

I also wish I could do chicken stock. No one eats it in my house (I cook vegetarian, mostly) but sometimes I just want it.

Today is Thursday.
Happy Thursday. Let’s make it thirsty!

Do you usually have a cocktail or spirit with your dinner? What’s your drink of choice when settling down to a meal? Does it matter if you’re alone or with family/friends?

Almost always. I like drinking. I like drinking when I cook. Depends on food. Sometimes beer. Sometimes wine.

Sometimes cocktails before.

I’m more of a drinker while cooking than with the meal specifically. Sometimes it carries over. Usually it’s wine while I cook, unless I’m grilling, then it’s beer.

It really depends on what we're having for dinner. There's something about and ice cold Mexican Coke with my homemade tacos but there's a lot to be said about having a Dos X with carne asada.

A semi sweet red wine with a delicious steak? Yeah....

And if it's just me.... Alone? I'm having a glass of water.

I usually drink wine with dinner. Sometimes beer, depending what we’re having. Like with pizza, it’s beer usually.
