This summer is wearing on me... the heat, the family, the everything....so I'm relying on "low effort but pretty" meals like this one (dinner tonight...or supper if you're a sweet southerner :) )

Love Meyers Lemons! I'm totally with you on the low effort cooking. Today, I'm making a beer can chicken on my Big Green Egg with baked potatoes. Nothing like letting the fire do all the work. And Bonus, I don't have to use the oven, so all that extra heat stays outside of my AC.

I love them too, but since it isn't Meyer Lemon season I had to settle for regular. It's kind of like making a Keylime Pie with regular lime - but it will do :)

I get you on the heat thing, but you still have to stand in the heat to cook it. (or is this one of those 'set and forget it' kind of thing?) I've been using my airfryer more than ever for that exact same reason.

Once I set the air flow vents on the Big Green Egg, the cooking temp stays even for the duration of the cook. The only thing I had to do was go out and flip the baked potatoes over at the half-way point. 6 pound whole chicken @325 for just over 90 minutes until it hit 180 degrees.
 
I have a query…

Anyone have ideas for meals that I can 90% prep/cook in the morning?

By nighttime I sometimes get pretty physically tired… still recovering from my Health Stuff.

I’m brainstorming meals to prep/make ahead, when I’m fresh, so I can either cook ‘em up real fast or pop them in the oven at night - with minimal physical labor.

That’s what I’m shopping for. So far my step son has shouted “lasagne!” about ten times so lasagne has been noted 😂

Thoughts?
I didn’t read all the replies, so I’m sorry in advance. I know you’re not a huge crock pot girl but what about an Instant Pot? I use mine a lot!

Definitely not Sex In A Pan (such a disappointment upon googling). Some say Lava Cake?

I'm going with Tiramisù - the Audrey Hepburn of desserts (elegant, timeless, and effortlessly seductive)

That sex in a pan looks a lot like a recipe I used to have! I will have to try it. For me I would chose a nice crème brûlée

Hmmm... I think you'll need to make this for me for me to make a proper decision here. I can help though, I'm a decent sous chef. I'll bring my own apron.

It’s Taco Tuesday, and let’s be real - tacos are never neat, never polite, and always a little messy… which might be why I love them so much. There’s something about eating with your hands, the sauce dripping down your wrist, the crunch giving way to heat, that feels just like a kiss you don’t want to end.

This week I’m making these super easy Spicy Shrimp Tacos with Avocado Crema...guaranteed to leave you licking your fingers. Isn’t that the best kind of Tuesday tradition? ;)

Spicy Shrimp Tacos with Avocado Crema
Serves about 4 - depending on taco size

1 lb. shrimp (peeled & deveined)
2 tbsp olive oil
2 tsp chili powder
1 tsp smoked paprika
1 tsp cumin
½ tsp cayenne (more if you like it extra hot)
Salt & pepper to taste
1 tbsp lime juice


Avocado Crema
1 avocado
½ cup sour cream (or Greek yogurt)
Juice of 1 lime
1 garlic clove, minced
Pinch of salt
Optional: 1 roasted jalapeño


For serving:
8 small corn (or flour) tortillas
Shredded red cabbage
Fresh cilantro leaves
Extra lime wedges


Directions:
  1. Marinate the shrimp: Toss shrimp in olive oil, chili powder, paprika, cumin, cayenne, salt, pepper, and lime juice. Let sit 10–15 min.
  2. Make the crema: Blend avocado, sour cream, lime juice, garlic, and salt (and roasted jalapeño, if adding) until smooth and creamy.
  3. Cook the shrimp: Heat a skillet over medium-high heat, cook shrimp 2–3 min per side until pink and slightly charred.
  4. Assemble: Warm tortillas, layer cabbage, shrimp, drizzle with avocado crema, and finish with cilantro + lime squeeze.
 
Your Tacos sound tasty (if Tacos can sound...), I'm going to try your recipe. Although, when I read your first line, I wondered: what is she talking about "never neat... always a little messy... eating with your hands"... I had in mind what the Japanese call taco (octopus). As sashimi they are neat, polite and you use chopsticks. I've used the word Taco regularly in both senses, but it never occurred to me that it is the same word.🐙:rose:
