Small (raw) broccoli florets splashed with a tart vinegrette is pretty tasty, throw in some halved sherry tomatoes for a colorful salad.

I've used those in salads quite a bit. They're a staple in most salad bars, or were. It's been a lot of years since I was near one of those though.

Usually I nuke them for a few seconds and add some melted cheese.

Nope. I don't like raw broccoli. I will only eat it that way if I am eating out at a salad bar and that's all they have. I only like them them after a 1 minute blanch.
 
While I cannot deny the benefits of of eating them raw, there are certain veggies I can't stand that way and cook them every time. Broccoli, brussels sprouts, mushrooms and

Steam, east with sea salt crystals and some high quality butter. Add asparagus.


cabbage are the first to come to mind.

Slice into short strips and mix with tahini, yogurt, lemon juice and crushed garlic.
 
Currently eating: casserole of sorts containing rice (white), corn, peas, tomatoes, sausage (just a bit for flavor) topped with Parmesan cheese.


Drink is a Crystal light pouch in water with ice.

No added sugar that I know of.
 
Just got a full body, dry, 1.7 sugar Cabernet.

Didn't think i'd like it, turns out, full body dry and low sugar was what i always unknowingly preferred.

I happened upon and interesting study into sugar free softdrinks.
Basically the study showed that relatively quickly the brains receptors
Are re trained to Not produce the sugar metabolizing reactions within the body
When they taste sweet(sugary) things.
There was going to be further study and its relation to fructose/glucose/Esweetners
And the body and brains reactionary response to false signals.
I'll stumble across that sometime.(its probably hiding in the freezer next to the ice cream, i'll go check for you...BRB)

This is where I disagree. My husband is perfectly healthy weight and fitness. He is raised on an international diet but very much Italian based. A moderate portion of carbs in HIS diet is going to be different from it in mine. However, we have been cooking his pasta like this since we learnt about this research. The other family won't consider it :) . I think if people want to continue eating good that's been part of diet for years. Mitigating cooking processes are useful to know about :)

It's certainly a cool idea. I never heard of it.

I think its ok to eat pasta for healthy people who are careful doing it. But when one is not, my opinion is they are better steering away from problematic areas, especially when realistically they don't know how it will affect them.

Edit: I also hope to make redcurrant jelly today. ( they at least need picking) It will get used by others in my family. It's not going to be worse for them to have a spoon if redcurrant jelly than it would be some wine; Balance, balance. It's part of a whole good diet. Just like I don't think fruit is bad for healthy people AT all. Sugar is only PART of a story I think. We are also advised to eat a rainbow, and the 'more sugary' vegetables and fruit are generally what make this feasible. Concentrating on one area of a diet can lead to holes elsewhere.

Healthy people balance; non-healthy people take consistent extreme measures that are well balanced.

Way too many weird chemicals in Crystal Light.

Another one of my rules of thumb is to only eat things with an ingredient list I understand.

Why not just drink water, or maybe add a slice of lemon or orange if you want flavor?

Blanching is far superior to steaming for veggies like broccoli, asparagus and string beans. They come out bright green, not shitty grey-green.

If you plan on storing them, freezing them, maybe.

But in both nutrient retention and convenience, steaming is ideal.

Convenience Is not a factor for me. I cook for taste and texture just as much as nutritional values, and as such will not eat steamed broccoli. No need to debate this, we can all prepare foods in the way we prefer.

Thanks for the wine post. I did some googling when I saw it earlier, found a cool link on the topic. (can't post now from my phone. As it turns out all the wine I currently prefer is very low in sugar.
 
So I made lemon bars - you know the kind with shortbread crust and a lemon custard. Yeah it was from a mix. Whatev. I've had them before and they're pretty damn tasty. Not anymore.

So the 8 x 8 pan has 18 servings with about 25 grams of sugar per serving. That's a 2 1/2" by 1 1/3" rectangle. For most people, two bites, maybe three. Insanity. :eek: More than half a day's sugar in two, three little bites.

I took them to work and gave them to the guys. At least the mix is out of the cupboard now.
 
So one of the guys brings in one of those mixed snacked sized bag of candy bars. Snickers, M&M's, KitKats etc. Looking on the back, they consider one serving of sugar in the 18 to 28 grams range.

One snack sized Snickers =9 grams
One snack sized KitKat = 7 grams, split in two for 3.5 per stick
One snack sized Mounds = 8 grams

Just... frightening and sad. :eek:
 
So apparently we're supposed to have less than 10% of our daily calories come from added sugar. For a 2000 calorie/day diet that's 180 calories per day - or 45 grams. That's nothing. One 12 ounce can of soda pop has 39 grams of sugar. One 1/2 scoop of basic chocolate ice cream has 17 grams. One 20 ounce bottle of gatorade? 34 grams. One Snickers bar - 20 grams. And those are the obvious ones. Two slices of sandwich size whole wheat bread? 6 grams.

So they are saying basically to go cold turkey. First three days - no sugars at all. No fruit, no starchy vegetables, no dairy etc. Just lots of proteins, vegetables and healthy fats. (Even if only three days, I think I'd have a very hard time with that. I eat berries and drink a large glass of milk as part of my breakfast every day.) On day four you can have one apple and one full fat dairy back. But I'd have to wait until week two to get my berries back. In week three you get grains back - oatmeal, quinoa etc. For the wine lovers, that can be put back in late in the first week. Which no big whoop for me as I don't drink. But they're messing with my rye toast for breakfast which displeases me. By week four you can have things like a little bit of ice cream twice a week.

Apparently the figure about 10% of the population is addicted to sugar. By going cold turkey it recalibrates your palate and gives the whole host of health benefits associated with lower sugar intake.





And of course the usual blah blah disclaimers about diabetics and pregnant women.

10 days without sugar

So they took 43 kids and for ten days cut back the sugar. Apparently they saw improvement in just about every metabolic marker. Lower blood sugar, lower LDL's etc down the line. Even those that did not lose weight still improved their overall health and numbers.



It used to be sugar was a rarity in our diet, but now we consume on average 130 pounds per year. And apparently fructose is a bit bastardy in that it doesn't suppress our hunger hormone. So we don't really ever feel full from it.

Maybe it's because I'm getting a little bit wiser with my older, but I've been looking at stuff like this lately. Yes I still have my couple bites of dark chocolate every day but I find myself cutting back or retooling in other ways. Instead of crackers, I'll opt for the handful of nuts. I find I feel better for it.
