We EAT roast kid goat or lamb in Easter. The offal and intestines we use to make Mageiritsa, that's the traditional Easter soup
But sometimes we don't bother with intestines, too much work cleaning them and they don't add much to the soup.
In fact george has had some mageiritsa last Easter when he was visiting, ask him

forget the ingredients; very tasty, this lady can put on the ritz in more ways than one....
