The Wine and Cheese Thread

I can see the flavours of that potato going well with beef. I often serve roast beef or steak with califlower cheese, not potato at all, and cheese really sits well with rare beef. I have thought I will try, but later in the year for us. :). I think I have seen that 'torte' cheese here but I don't know if they call it huntsman or even if the cheeses are the same, but of course, i think I can just use the cheeses and mix them up.

Oddly, I don't really care for Huntsman on it's own. My taste in cheese is not particularly catholic; I tend to prefer goat's milk and double/triple creams. But something about this recipe just caught my interest.

I'm glad it did! That little pungent edge goes so well with the heaver meat. :)
 
I was curious enough to try this last Sunday. Smooth, with a rich layering of flavor. Extra decadent, with a little tang from the stilton. The richer, dense flavor went well with chicken livers. (I know, not beef or pork, but still a heavy meat and what I happened to be serving.)

It was a hit. I'll definitely be making it again. :)

I love liver, but it have never , ever heard of it deep fried! I like it quickly pan fried, still pink, prefer calves or chicken. Chicken I love with Marsala or sherry,shallots, maybe some lighter mushrooms. Calves liver with onions and creamed potato and .....mmmmm, green beans. Sigh.

This place, Harold's Chicken Shack, is where I learned to love fried chicken livers. Their secret ingredient: a hint of extra-fine sand in the batter! :D

g thinks it might be of interest to the thread that our kitchen is in a converted cheese room, a room where cheese was made on the farm. We don't actually call it 'kitchen' but rather 'cheese room'. The type of cheese made here is no longer made ( commercially at least, and we have not yet found any small producers or kitchen producers) but seems to have been a little like cheddar or Gloucester, a 'simple' hard cow cheese. The adjacent room which held a small milk tank is now a very small utility kitchen/ boot room.

I think I would love your house and gardens :)

Your house sounds positively charming. I grew up in a very old house, I understand functionality challenges, structural hazards, re-purposed rooms, etc. I still think it sounds perfectly lovely :)

Priest hole......where monks, priests etc hid during the reformation of the monasteries etc when Catholism became a big no-no because Henry v111 needed boys which worked out well for those wanting Protestantism to take over. This house is maybe a mile and a half from an old monastery and the old staircase was moved about that time, and some ceiling heights changed, apart from one, which has a false floor above it, and a sort of hidden wall entry point too. Its very low, no one could stand in it, only sit. There is also a hidden hole in the wall, just about a yard square, in another room, access able only from the floor boards. It would make excellent hiding place, because you only really know its there if you know the house well or see a detailed floor plan. It would be very good 'punishment room' if one wanted such thing, that drop, because you need a ladder to gets in or out. :(.

Maybe the other hidden place, was not priest hole, maybe it was just somewhere for old days kinky hiding, and the drop hiding place a 'cell' for naughty old days pyls. ;)

Oooohhh! Exciting! My Aunt had a place with a secret passage way. Such fun for kids! And, as you say, possibly adults :D

I'd love to have a secret passage, but having one means I'd have to live in a house instead of an apartment and that thought isn't very appealing to me, so I'm doomed to live a sad, secret passage-less life.

What did your aunt do with the secret passage? Was it used by others than kids imagining to be supervillains?

And while I'm in the wine thread, can anybody recommend a wine that would go well with crayfish? I've never managed to find one, so I usually just get beer. My friend would rather have wine, so I'm in a bit of a pickle.
 
Bubbles. Maybe a drier Italian if you can get it, because champagne is expensive. Or Riesling, maybe new world Riesling, or s. Africa Riesling.

Chardonnay is classic pairing but I think its decided here few like Chardonnay?

I hate bubbles, but I'm pretty sure I'm in the minority with that. And we do have a bottle of cava, maybe this is the occasion to drink it.

I've tried several rieslings with crayfish, but have never found one that I would have liked. Do you or somebody else have a specific wine to recommend?

I read just now that somebody recommended grüner veltliner. That might be nice. I've usually liked grüner veltliners.

Oh....and flats can be in conversions not just purpose built buildings ...then you could have secret passage, or old apartment with part of old servant passage.....

It's not very likely that I'd be able to find an apartment with a ready-built secret passage in it. I wish It would, though. I don't want to have anything to do with the construction of my place of residence. :)

There are apartments with servant passages, but they aren't really concealed like the one in CnC's aunt's house. :)

For crayfish I would go with something light and tart to contrast with the sweetness of the meat. A dry Italian Pinot Gris would be ideal :)

I love this thread btw. :D I've made my own wine before using the kits but lately my white wines have been coming out very sweet, even if I buy a dry kit. I think I got the temperatures wrong at the start and the yeast didn't break down properly.

My step-dad used to make wine from scratch using whatever was in season. The best ones were elderflower wine and blackberry wine.

I love the IDEA of making wine blush rush. My grandfather made wine, but ....not very well. It exploded once and melted some Formica. No one ever drank his wine, I am to
D it was all very unpleasant....I never was allowed to try, which is peculiar as I was sipping wine, with permission as a mere toddler and port, and very small tastes of other things as a small child but not toddling.
Wow! It exploded?! I think I'm using a different technique to your Grandfather... ;)

I bought my kit in a local homebrew shop. You get two large containers, one with the gas-stopper value (can't remember the technical name for it), a long wooden spoon and some demijohns. You can buy wine kits easily online these days and it saves so much money.

One of my £30 kits can make around 30 bottles of wine :)

I was the same as a child - I was allowed a little wine here and there on very special occasions.

As I got older, my parents believed it was better to allow me a glass of wine or cider occasionally at home than me sneaking off down the park to drink with strangers (as many of my classmates did. It never appealed to me)

I'm not really sure what my aunt did with her secret passages, no ;) Knowing her, could be anything!!

And as to which wine to drink with bugs, ask and ye shall receive...
