1. Cut puff pastry into squares. Bake per directions. Slice in half horizontally when cool.
2. Put a heaping spoonful of Mascarpone cheese in a bowl. Add Cocoa powder and confectioners sugar, start with 1 Tbls each and go from there and tasting until you're satisfied. Mix well until smooth and cocoa is fully incorporated. Obviously, more cocoa = more chocolaty flavor. Ditto with the sugar, more = sweeter. Mix it how you want it.
3. With a table knife, "butter" the bottom half of the pastry shell with the Mascarpone cream. Add a spoonful or 2 of cherry pie filling. "Butter" the top half of the pastry shell and place on top of cherry pie filling. Frost the top of the pastry shell with the Mascarpone cream, add a Maraschino Cherry or 4. Dust with powdered sugar.
4. Optionally, you can drizzle a bit of Hershey's syrup on top. Or not, it's up to you.
5. Guard it like your life depends on it from all comers, including the dog, or you won't get to enjoy your creation. Not kidding.

These are not as sweet as pastries frosted with buttercream frosting. If you want sweeter, just add more powdered sugar to the Mascarpone when mixing.

These go extremely well with a White Russian cocktail.
