Pesto in meatballs is clever.

My standard meatballs, as taught to me by my best friend's mom (from Calabria) went like this:

2 lbs Ground meat: 1/3 pork, 1/3 veal, 1/3 beef chuck
2 beaten eggs
1/2 cup plain bread crumbs
2 Tbsp pignoli, toasted in pan and chopped fine
1 Tbsp dried basil
1 Tbsp dried oregano
4 cloves of garlic smashed
2 Tbsp black olives, chopped
2 Tbsp green olives, chopped
2 Tbsp grated romano cheese

Heat 3 Tbsp of olive oil in the pan you'll use to cook the meatballs. Add the basil, oregano, and garlic and heat up just until the garlic starts to develop some color, then add into the mix.

I've adapted from that original version, and use 3 Tbsp of basil pesto and 3 Tbsp of olive tapenade instead of the separate ingredients. I make pesto up to freeze a few times a year, and find the tapenade at one of our supermarkets.
 
This evenings feast will be chicken with a mustard sauce and Swiss cheese, rice pilaf, and green peas.
 
There is little doubt. I am in a cooking funk. :(.

Last night I cannot remember now what we ended up eating, and tonight we had cheese and fruit, ( I should have had soup for my sore throat but could not be bothered even to make soup).

It happens occasionally, huh? its days like this I am grateful we have no kids so no need to set good example.

Yes! This totally happens to me as well. And if I want to have ice cream, corn flakes and rum for dinner, I'm so thankful that I can :D
 
I was in the mood for enchiladas and the grocery story (singular in this town) does not open till 5:00am.

I had some corn tortillas and some leftover canned, green enchilada sauce that I had used in my green chile the other day. No cheese. Scratched my head and remembered I had some feta.

So I brushed all sides of three tortillas, microwaved for two minutes to soften. Stacked is easier so I layered sauce, minced Bermuda onion, and Feta. Nuked for 2 and 1/2 minutes.

Was not enchiladas, but was tasty in an interesting way.

Same thing with a blend of Monterey Jack, Queso Quesadilla, Cheddar and Asadero in the"Mexican" blend and a sweeter onion and you have really good cheese enchiladas in no time, one plate prep, no mess.

Queso Quesadilla is basically Colby cheese. I don't know an equivelent for the Asadero Cheese. Has an umami note to it.

I had a roommate whose mom was from just over the border in Sonora Mexico. He likes to add a sprinkle of green olives and a drizzle of vinegar over the above. Changes the dish in an interesting way.
 
What? No peppers or mushrooms? :p

I was gonna make a mushroom pizza originally, but noticed that the use by date on the chorizo was Monday, so I used that instead. :)

And there were peppers in the tomato sauce.

Next time a beet & mushroom pizza? :)

Sounds similar to what I was thinking, only I was thinking about beet disks caramelized with balsamic. If I can still find some porcini, I'm definitely giving that a go.

I've been in a serious cooking funk, so I just haven't had much to post here. Been otherwise engaged I guess. Gotta start working on that S for Slovenia, because I already have T for Denmark sorted out. :)
 
Its so odd. For me this is the time of year most exciting to cook.....mushrooms, squash, chestnuts, weather making warm food more desirable. I have a cold though and taste and smell are lowered so I think that is a factor, its harder to be excited when you cannot so completely enjoy the preparation even.

I have decided that you have had this cold entirely too long, and you must kick it, at once! :p
 
Our Saturday mornings tend to be a mix of home renovation shows and cooking shows, bouncing from channel to channel. Right now it's Jaqcues Pepin doing potatoes 4 ways. I'm taking notes. :) Later is the British Baking contest, doing breads and other lovelies.

Master wants to start doing some baking, but it's been persistently hot here (juuuust around 100 for the next week). We've purged the pantry and reorganized it, so next up will be the kitchen cabinets and drawers. That should keep us busy until the temperatures become reasonable!
