:) I can't tell if my autocorrect is not correcting enough or correcting too much these days. I think I fiddled with something in the settings and now it's just crazy.

I made kefteh and rice. I used 75% lamb and 25% beef, along with mint, cilantro, onion and spices. I also made some tzaziki to accompany, and used it to dress the salad as well. So glad I have leftovers! :D

Or kefta, I don't really know what language that is, I have seen it spelled lots of ways, and I think it's pretty common across lots of middle eastern countries. It's basically a highly spiced meat patty. Cayenne, paprika, cumin, salt and pepper, and always fresh green herbs. Parsley, mint, coriander, any mixture of meats and spices and herbs. And a lot of onions :eek: One medium onion per pound of meat. You have to pretty much mince the onion so you can get it all mixed in. The patty should be pretty small, you want a high ratio of exterior, fried texture to interior, softer meat. Pan fried, out cooked over fire if possible. They are delectable :D

Tzaziki I'm pretty sure is Greek. A sauce of yoghurt, cucumber and fresh mint. Also delectable :)
 
I did not serve with great elegance this evening, but it was very good tasting all the same

We usually have this savoury loaf later in the cold season, but its cold enough to make it feel worth it. Also, its normally eaten after resting a while from the oven, tonight we ate it straight from the oven.

I also have put a chicken in buttermilk for tomorrow night.

That looks awesome :) What's in the loaf? And are those the anchovies in the plastic pot? They don't look like what I have seen, anchovies packed in oil.
 
The kids made mini pizzas and I had a grilled ham and cheese with sliced black olives in the middle! It was yummy! :D
 
I made bibimbap. It was good enough, but I'll have to tweak the sauce a little. In the pic it of course looks kinda sad.

Beef, carrot, spinach&garlic, bean sprouts with ginger&soy, egg.

I found an Amish cinnamon bread recipe and modified it to add pumpkin. Have fresh vanilla bean dressing for on top. Smells divine in the oven.

Thinking of plain ole' hot wings and asparagus for supper with the bread for dessert :)

It is time to start looking at some fall recipes for soups and stews and other savories!
 
Tried a new recipe tonight - Stuffed Pepper Soup. Hearty, mildly spicy, and with a salad and garlic bread, perfect for a cold autumn night. :)

That does sound good!! Can you share the recipe?? I usually make my peppers stuffed within a casserole dish I have never made a soup before...sounds interesting!

Tonight we had hamburgers and a steak with very slowly sauteed onions. For sides, corn and seasoned fries. The onions are the star here. I start them before anything else and they are the last thing to be done. I saute them in a cast iron pan with about a quarter stick of butter, a bit of Tabasco sauce, a good bit of crushed garlic and salt and pepper. They about melt when they are finished. Sooooo yummy! :)
 
Since it's finally feeling like fall again, I'm looking forward to some pumpkin cream cheese/chocolate chip cookies tonight! Perfect way to end the weekend off right.

Sure! This is one of the simplest and yummiest that I've found (on FB, no less!). Made a few modifications, but all you really need to do is throw all the ingredients in the pot and cook. I used some cooked hamburger that I had in the fridge (I'm going to try turkey next time!), leftover wild rice, the last of the garden tomatoes, and whatnot. I don't cook with salt, but may add some if needed. Mangia!
Oh...of course I added fresh garlic!

1lb LEAN ground beef
1 lg onion, diced...
1 cup uncooked or 2 cups cooked rice (I love to use wild rice)
1 can flavored diced tomatoes (Red pepper and fennel, roasted garlic, sweet onion etc) (14.5oz can)
1 can tomato sauce (14.5oz can)
1 tsp dried oregano
1 tsp basil
½ tsp salt
¼ tsp pepper
1 box chicken stock (32oz)
2 cups water
2 tbsp powdered beef stock
3 bell peppers (I use 1 big green pepper then 4-5 red and 4-5 yellow BABY bell peppers)
Cheese for topping (optional)
Fresh cracked black pepper for garnish (optional)
In a large soup pot coated with cooking spray, over medium-high heat, brown the grown beef with the onions and rice. I know that sounds odd, but browning the rice gives it a nice nutty flavor – do not allow it to burn!!
Meanwhile dice your peppers into small ½" pieces, set side
Add in the diced tomatoes, tomato sauce, oregano, basil, salt, pepper, chicken stock, water, and powdered beef stock, then allow it to come to a boil.
Reduce heat, cover and allow it to cook 20 minutes then add the peppers and allow it to cook another 20-30 minutes (some types of rice may need longer cooking times)
Serve with cheese on top (optional)
Serve 6

I wonder how that would taste without any peppers. I'm the only one in the house who likes sweet peppers/green peppers (and green ones only sparingly). :rolleyes: I'm not allowed to make my mom's version of chili (okay, it's tragically mild, but the base is tasty enough), marinara sauce or meat loaf because of the peppers. Granted, I never liked Mom's meat loaf anyway, but it wasn't just because of the peppers.

The peppers give it the "kick" but can sometimes be hard on the digestive system. Maybe try orange ones - they're the mildest. You could probably use mushrooms instead for the added heartiness!
It's one of those recipes that you can play with.
