Sorry, I am being unclear to all but myself
Not wanting heavy fried foods. Its why we don't crave Chanukah foods this year. This would be doughnuts, and latkes, and fritters and cheesey things like mozzarella in carrozza would pass too, cheese and oil....grease and fried. But its the least thing I crave right now. We are having chicken tortillas tonight....sauté,a so very lightly fried. I also crave warm salads.
I remember we had this conversation and someone ( Primalex maybe) adked how I cooked fries without deep frying and I was just ....well....we don't really have them so much because its not something we eat so much at home.
I don't really see or taste the difference if it's a question of potato.
Vanilla bean cookie bars. For a party tonight. The frosting is so~ pretty with the little specks of vanilla.

I made orange cookies yesterday, but they didn't turn out so good. I need to tweak the recipe before I can make them to my Christmas food gift baskets.
They tasted very good, but the texture was not what I was aiming at.Orange cookies sound very yummy.What do you do with all the test batches?

Ahh, you found something I do not like. Peanut butter cookies. Oh, wait, I don't like peanut cookies, I never tried peanut BUTTER cookies.
I am seriously thinking now about decorating the kitchen with cookies and popcorn. I am not sure how long the cookies will lags though. I don't expect to east them....but hope they will not fall off their ribbons as they go stale. Any one done this? I thought after Christmas I could put them out for birds?

If you are just putting them out for the birds, why not cook up some cookie shaped dog biscuits? There are plenty of recipes around for those, and they should not be so crumbly. Just a thought

Besides, what would Texans know about hamburgers? Aren't you guys all about the big honkin' steaks that are too big for a normal grill so you cook them on a cast-iron football field, or something?

A steak cooked sous vide and then seared in butter, sauteed mushrooms and mashed potatoes loaded with sharp cheddar and chives. Magical!
I really am going to have to get on board with this whole sous vide thing. It just sounds so...complicated.![]()
That's just it. It's not complicated in the least! As a matter is fact, it takes a lot of hassle out of cooking. Set the temp where you want it, and the steak can really stay in there kind of indefinitely. I left it in there about an hour, but if it stayed in an hour and a half that would be fine as well. And you would still end up with a perfectly cooked, medium rare steak. Try that, cooking by any other method!![]()
Hmmm. You make it sound...so easy. So, I would need to buy an appliance for this?

Yep. I think mine was around $150. I can let you know what it is if you want. I looked at a lot lot lot of them before I bought it, and I'm totally happy with it.
Edited to add: It's really just an immersion heater. Like a giant fish tank heater that can get a lot hotterVacuum pack your.. whatever, and immerse it at the temp you desire the end result to be. I cooked my steak to 125°, because I finish it in a hot pan with butter. You really need to do that if you want a good crust on your steak.
