Maple Pecan Rosemary Acorn Squash
Ingredients:
- 2 acorn squash, halved and seeded
- 2 tbsp butter
- 4 tbsp maple syrup (or brown sugar or honey)
- 1 tbsp fresh rosemary, finely chopped
- 1/4 cup toasted pecans, coarsely chopped (optional)
Instructions:
1. Place the acorn squash halves on a baking sheet with the scooped-out centers facing up
2. Bake in a preheated oven at 400Β°F/200Β°C until tender, about 40-50 minutes
3. Sprinkle on the toasted pecans once out of the oven and enjoy with a spoon!
Servings: 4
- Acorn squash is also known as pepper squash
- Baking time may vary depending on the size of the squash
- Add 2 tsp white miso paste to the butter, maple syrup, and rosemary for a savory twist
- Top with 2 tbsp crumbled blue cheese after baking
- Add 2 tbsp cooked and crumbled bacon after baking
- Mash the squash flesh like mashed potatoes
