It's much more sensible for two bad characters to have a wager on the nature of humanity or at least of a specific human. Especially if they disagree on how difficult it is to derail humans. One thinks it's easy and the other difficult. Then the whole thing turns into both putting their thumb on the scale trying to make their belief true.

So, the bet was for the angel to try and lure the innocent soul away from her abusive guy. Angel didn't think he could, Devil was sure he could. Pay off was. If angel succeeds, then he has to let himself give into temptation. If however he failed, and the Devil lost the bet, then the devil had to make sure that the abusive guy was one of the souls he took that night.
Some foolish young man summons a succubus, hoping for something silly like a large penis. She gives it to him, then extracts her "Payment", which is fucking him and absorbing his sexual energy until he's on the precipice of death.
Desperate to live, he prays to Heaven for relief. Angel Charity arrives ... A few minutes later, Angel Lola arrives, wearing an outfit similar to what one would find at a Halloween college frat party.

Gaiman liked to skip forward centuries at a time to handle that (good omens, sandman). Though he also came up with a clever way to have the same human persist.I'm sure they would, although it might be the longest slow burn ever.And putting a mortal in the middle as was suggested by the op would be an excellent stepping stone to such a story that might be mostly untold.

They kinda have to be when you’re explaining the lives of immortals to mere humans. You frame it like that friend you get together with once a month for mimosas only it’s once a decade. Stuff changes a little bit between those meetings. Your friend become more hopeful or bitter. More confident or shy. Has a new win or loss.I think we'll try the cane this time.
