We do drink it. But never heard anyone making it so kudos to you. I also dread to think how much 2 kilos of ginger would cost here.Do you Brits drink ginger ale too?
I made some on Saturday.
Wash and crush just under two kilos of ginger. I use a piece of round steel that I stole, sorry, found at work.
Put it in a saucepan and add enough water to just cover it. Bring to the boil and leave to simmer for an hour. Strain.
Repeat with the same ginger.
While it is cooling, gradually add three litres of lemon juice to the ginger and strain.
Collect all the liquid in a large container and sweeten with honey until it is just drinkable. It is a concentrate.
Pour into preserving bottles and boil down at ninety degrees for twenty minutes.
To drink, dilute with sparkling water at a ratio of about one to six. If you have a cold, you can also drink it hot without diluting it. If you want to.
