As for the cross-country skiing, I'll stay behind in the cabin and keep the fire stoked.
I'm sure Thør will keep good care of you. :)
 
I will think of you all as I toss shrimp, sand fleas and mullet into the surf on Saturday and Sunday. There is something to be said for living in a place where the average mean temperature is about 65. You gotta love that Gulf Stream.

there are cabins for rent.......and lodges with cabins or bunks.....

this place MV is nicely tucked away from civilization and they have nice xc ski trails

Here we go..........

Lantern Fish Ceviche

1/2 cup sugar
1/2 cup Soy Sauce ( Shoyu low salt I recommend )
1/4 cup rice wine vinegar ( Mirin )
3/4 cup lime juice
1/2 teaspoon fresh garlic minced
1 oz. ginger, smashed
1 oz. wasabi paste
8 oz. Lantern Fish sliced into 1 oz. strips

PROCEDURE
Mix sugar, shoyu, vinegar, lime juice, garlic, ginger and wasabi paste in a bowl. Place fish in bowl and marinate for 1 hour. After marinating, place fish atop a bed of daikon ( big white carrot , actually its a radish ) curls, spoon marinade liquid over fish and serve chilled.

Becca, when I would go fishing in the Sea of Cortez on the Mexican side, Ceviche was a staple. Though, we diced the fish and make a Ceviche type of "salsa".

I have tried it like that . It's wonderful . We will even marinate it on deck with fresh catch and just bliss out . I think we should have some at your pending nuptials , what do you think ?

That is what it was called by some of the friends that made it. Kind of chunks, shredded fish, a lot of lime juice and various ingredients. I just always presumed that is what it was. You ate it as a salad or a dip type salsa.

I lived in the Southwest for too long. :eek:

I will see if I can talk him into it. I don't think he will have a problem. The way our nups are planned, it will start a top a mountain and end in the sea.
