I bought a calf (2 years old), and it will be slaughtered in the next couple weeks, if anyone has done this, is there a best yield philosophy?

I get to pick up the meat in march, so anytime after that, I will sure and invite all of my friends

I have never done a calf or bought a side of beef, but have dealt with dozens of deer and a few moose over the year.

I have come to enjoy better cuts of meat, I don't hunt anymore and one of the reasons is I had a hard time consuming all the meat.

A whole steer is a few years of meat for me, and too much that I don't find enjoyable like blade steaks etc.

Go overboard on ground is my advice.
