The Cozy Corner

I have my truck parked down by the waters edge. The bed of it full of pillows and blankets. I've hung a tarp to use as a projector screen. Her favorite song playing softly. The picnic basket is full of snacks and enough popcorn for days. Now I just need that midwestern girl to show up and dance with me in the moonlight while the night washes our inhibitions away. 😘

Soft or hard shell and corn or flour? I prefer medium corn. As a kid - we had tacos every Friday night for dinner. My mom fried the corn tortillas - and we’d get one that was softer with some butter and salt. So delicious. Plus we always had hand grated Colby cheese - no convenience bag cheese then.

I love corn for tacos but if I am doing burritos I prefer flour.....yes, I'm complicated! 🙄

Tonight I'm doing fried flour tortillas - I apparently really love them today!

Fun fact - I haven't bought a bag of shredded cheese in over 10 years
I grate monterey jack and medium cheddar each week with my rotary grater... best investment - EVER!
