My turkey is going to be fantastic this year. Brined for two days, roasted under brown paper soaked in olive oil (until the last 20mins). Gravy from the drippings.
The grilled spicey shrimp skewers are done, using split raw sugar cane as skewers to cut the heat.
I still have to stuff the whitefish I caught myself, rye bread stuffing with orange zest, dill & mint seasoning.
Already picked up the 10lbs of pastries from the Polish bakery, the hazelnut & chocolate cake has 14 layers.

It's all downhill from here, and I'm usually glad when Christmas dinner is over :D

One turkey is in the oven, the other in the smoker, all veggies are ready to cook, table is set & dinner in 6 hours, family arriving in 2-3 hours.
Having ocd is awesome :)

Waves at Leigh.

Haa haa I know right? Everybody freaking out last minute, you just grab another glass of wine and watch the awesomesauce come together. Right after you cook off the from scratch cranberry sauce with orange zest & nutmeg.

:D

Merry Christmas
I don't know why people freak out about having people over.
My turkey in the oven I brined, I won't cook a bird any other way. I love my white meat mouth watering juicy, not dry.
To tell you the truth, when it comes to cranberries I only like the canned jelly sauce, but still have "the real" cranberries for those who want it.

I have a hard time eating anything that makes a *plop* coming out of a can :D

BTW is there a single Sobeys in Oakville that still sells bagged cranberries? JFC had a bitch of a time looking for them (Hamilton Farmers Market, NB cranberries, bought ten pounds been eating cranberries all week!)

Alone for Christmas and not sure what to make for dinner.
