What's cookin', good lookin'? Part II

I have never attempted lasagna but am really considering it now. We are trying to eat healthier due to very recent and new blood sugar issues but I REALLY want some pasta.:(

I’m starting back healthy tomorrow. I had some stuff going on the last week that threw me off, so I rarely eat pasta and bread when I’m on track.
I do eat taters, though.

I can freeze what my family won’t eat. Italian always freezes well. Tomorrow I think Necro is cooking some shrimp healthy thing.
 
I made a spicy eggplant hash with Middle Eastern spices and herbs (za’atar, sumac, cinnamon, mint, etc.) and about six different vegetables.

It’s delicious, but I made it way too spicy. Three jalapeños + a teaspoon of Kashmiri chili powder + two teaspoons of red chili flakes. Think I need to make some naan or pita to tone it down some. Or maybe a nice cucumber raita.

I totally screwed a beautiful London Broil today using a new recipe. It came out overdone and tough and I was so ashamed to put it on the table. We attempted to eat a little then I turned it into swiss steak since I had the makings on hand.

Although I must say the baked sweet potato and the oven roasted zucchini was awesome.

I'm not good at cooking meat and I always feel really bad when I stuff it up. Making meat or fish inedible feels a lot worse than when it's just vegetables. I'm glad you managed to come up with a plan b! Your zucchini and sweet potato sound amazing. I'm looking forward to roasting friendly weather. :)

I made a Caprese salad and I'm gonna serve it with some yummy bread. Baby potatoes and leeks with cold smoked salmon for main today.

I plan it so I have the oven do double duty. If I have it on for whatever reason, I make several dishes using it. I've learned that out of necessity living here.

Yesterday was only around 90 degrees so not bad but it only gets down to 70-76 degrees for "winter".

I bought a sous vide cooker, and it has been a game changer. Over done meat is a thing of the past.

One of the few times I actually followed a recipe implicitly and it was a major fail! I prefer to trust my instincts.

I've looked at sous vide machines before but just never felt I would use it enough but I think that is changing with dieting. I'm cooking a lot more.
 
Chanterelles, porcini, black trumpets and yellowfoots with carrots and zucchini.

The mushroom season has begun, so it's time to eat up the rest of last year's stash! :)
 
Made a scrambled egg and sausage breakfast casserole this morning. It's better than my usual bowl of Lucky Charms (but those are pretty good, too).
 
There was an episode of Blue Bloods where Erin persuaded a mafia thug who was in WitSec somewhere in Flyover Country to come back to NY and testify in a trial she was prosecuting. She asked him, "Why? What made you do it?" He replied, "I had to have some decent pasta."

I totally get it. :(
 
This weekend was the traditional August or September get-together for me and a few friends.

Salad with homemade cheese
Quickly pickled cucumber slices with dill and garlic
Quickly pickled cherry tomatoes from my friend's garden with chives
Smoked salmon and horseradish dressing
Cured pikeperch
Canapes with smoked vendace mousse
Canapes with whitefish roe
Deviled eggs with a roe paste filling
Pickled herring
Boiled almond potatoes
Crawfish with aioli
Artichokes with aioli
Sourdough bread

And today we spent the morning making moose hot dogs. Had them with red cabbage and homemade mustard.

Everything was tasty. It was a lovely, summery weekend spent by a pretty, pretty lake. Can't complain.
 
I made my first ever, and quite possibly last ever, fluffernutter sandwich today.
