any suggestions on a leg of lamb roast other than my usual, stick garlic into slits, rub on olive oil, rosemary, coarse s&p, maybe some dijon.....?? :confused:

Ive been pretty well... and you???

ya have any extra roasted garlic by any chance???
blend that with some honey, olive oil, s&p , cayene and pine nuts (maybe some fresh rosemary and or thyme) untill a smooth paste... then inject in to your meat.

Even if you dont have the roasted garlic you can make some while cooking the roast and serve it with some brad on the side.

or...

just take some cayene, sweet paprica, ground cumin, black pepper, salt, lemon juice, honey and olive oil. Make a nice marinade with that and slop it on let marinate over night... or if short on time just cut a hole trough the middle of your meat and pour it in before roasting... you have to let it sit for a while.
(its actualy about 1 tsp of lemon juice and honey per cup of olive oil.


or

how about a 7 seed roast
take whole seeds of
carraway, fennel , yellow mustard, brown mustard, coriander, whole red peppercorns, whole green pepper corns, poppy seeds and salt. equal parts of each. (if you put it in your coffegrinder/spice mill for a couple of 1 s pulses itll be a bit better.)
rub up your roast till completely covered and let it marinate in your fridge for over night or a couple of days.
Before cooking spray the thing with some olive oil and voila.

Or

you can make a provencial style stewed roast thing... (this one get comlicated)

Take one 1 oz can anchovies... the dry salty kind that are in oil...
(toss the oil you only want the filets.)
1 qt good gelatenous beef stock ( or 1/2 beef 1/2 lamb stock if possible)
a tsp of black pepper corns, a tsp of white pepper corns a tbs of coarse salt, 6 cloves of garlic, 3 sprigs of rosemary 4 sprigs of thyme.
1/3 -1/2 bottles of a good red wine of your choice.
1/5-1/4 cups of soy sauce

pour the combine the ingredients in a pot and breing it to a boil
let it cook for about 1 hour. place the liquid on the side.

take your roast sub it down with some paprica, s&p and oil.
now carefuly and completely sear the surface of the roast.
(you should let it get almost too dark)
Let it sit for a bit...

Take the liquid and strain it so that it is clear.

Use 1 cup unbleached organic flour to make a dark roux using a blend of butter and olive oil then pour the broth in it. bring it to a boil. (this should only form a see trough film on the back of the spoon.... also take yor time making the roux.. its very important to have it a dark brown in color.)
If the sauce gets too thick pour in more red wine... you might as well pour some more wine in just for good measure.


After this place the roast in the pan with the sauce and let the whole thing simmer untill done... turn the roast over ever so often to have it cook evenly...
place the roast on a serving dish and pour the sauce around it.

this works well with some nice peas, steamed broccoli or cailiflower, maybe a cauliflower gratin or some garlic bread on the side.


then there is the option of....

grilling the whole thing... just heat the grill to about 400 and lower it to a 325 when finished searing...

omg.....that's lots of suggestions.....i love the first 2 and the provencal one. although i think it's too hot to do the stew thing...might try it in the fall or winter! no barby yet so can't do the grill thing. don't think a stove top cast iron grill pan will do it justice! so it's on to the first to then.....now which one to pick :confused:

now i'm starving after reading this.....hmmm.....wanna come live with me? hehe.....:p

one question though....the first one, do i have to inject? can i just rub it on or cut slits in it and shove bits in? i don't have a meat injector, only a syringe for injecting wine into meat (don't ask) lol.....dont' think the paste will fit into this needle! :rolleyes:

the stew thing its not as heavy as it sounds... ya only eat about 3-4 oz of the meat with some sauce and maybe some cous cous on the side. (even long grained rice works well)
+ some steamed vegetables... or some nice stuffed zuchinis.. etc.. :D


also... yeah you can cut slits and shove the paste in those... or you can dilute the paste in to a liquid and inject it with your wine injector (you just have to add more salt to the liquid before using.. just to bring back the flavors a bit more). Also a piping bag works wonders when in need of an injector.

you can also make a nice rollad out of it if you want... just go easy on the paste since it is strong... (if you choose to go with that one)
 
personaly i like the seeded one... but then again im partial to thign like that... its very fragrant...

I havent heard any complaints about it as of yet. (only complements in reality)
