I love cornbread! Jiffy Mix is the best! :p Yea.....I know its not the same as my Grandmother's, but its quick, easy, and good. Besides, a can of creamed corn, some shredded cheese and a few chopped Jalapenos and you have one fine pan of cornbread! Mmmmmm good! :D

Certainly Not a Member of Grits, But I Like to Eat Them

I prefer cream of wheat for the smoother texture, but grits are always fine with me.

OK, I confess.................

I give!! I'll say that up until I met MY-Sir and had beans with my breakfast, I too was a grit eater. Perferring yellow grits over the plain white, but still enjoyed them on the rare occasion when I ate eggs. That changed when I went to England and MY-Sir introduced me to a full English breakfast. I looked at the beans on my plate and said to Him and His son, We eat beans with Bar-B-que at home, not with our breakfast! :eek: Needless to say that by the time I returned to the states, I was eating beans with my morning meal. Now............I prefer beans and HP Sauce with my eggs.:)

I'm with Blue.... i'm a NYC girl... actually a tri-state girl.. born and raised in nj... i tried to go away for a year of college in new hampshire... i've since transfered to a school back in jersey... I love being a simple hour ride form nyc. I go there a lot and i know it real well.


as for real grits the food... never tried them... i'm not a southerner that's suppossed to like them ;P But we do have a lot of native polish (my mom is pure polish) and we poles are suppossed to like kilbasa and sourkraut and i cna't even sniff arround it without my tummy turning.

I used to love hush puppies at the local seafood house when I was a kid. I don't remember what they are, but I know I liked them.

they're balls of batter and breading which have been fried. sailors, supposedly, would make these out of leftover flour for their dogs in order to get them to stop bothering all the fish they'd caught.
 
Ok, I live in SC and have since I was a baby. Yes, I love grits, but only with salt and butter.

That Jiffy cornbread mix IS good, and cheap as hell. I put a little sugar in mine and melt butter in the pan before putting the batter in. It's damn good.

When we visited England about 4 summers ago, I made a point to try and go find my father's grandparent's homes and other places related to our family history. I was surprised to find a big HP factory in Aston, West Mid's, not far from where my grandfather was born. HP seems to be a staple there. They appear to used it as much as Americans use A-1 or Heinz 57. :)

Oh yea.........HP is lovely stuff! MY-Sir has hooked me on it. I also like malt vinegar on my "chips". Hmm......all this talk of cornbread, hushpuppies, and chips is making me a bit peckish. :p

Two kinds:


Corn Grits
Falls Mill mills locally grown whole white hybrid corn. The corn is dried to a 14% moisture content, then each kernel is cleaned with forced air. The kernels of grain are run through the mill stone where they are ground to a certain texture and then sifted through two wire mesh screens. The three products sorted are white corn meal, white corn grits and the bran that pops off. There is a fine bran still in the grits product. This bran will never soften up with cooking. Depending on personal preference, the bran can be left in or removed by rinsing the grits before cooking. Yummy!

[hominy grits]
Hominy is made from field corn that is soaked in lye water (potash water in the old days) and stirred over the next day or two until the entire shell or bran comes loose and rises to the top. The kernel itself swells to twice its original size. After the
remaining kernels have been rinsed several times, they are spread to dry either on cloth or screen dryers.


I agree with Bunny B's assessement of taste, except that to add cum would improve the taste.

Shrimp and grits are very good.. if made correctly..

I had them at a place in New Orleans.

My Father in Law makes the best sweet tea in the world. i have told him for years if he would bottle it and sell it he would make a fortune.

They have it in Connecticut, and if they have it there, they sure should have it in New Jersey. They had it in Washington state where I lived for 20 years, and that place is Bumfuck Egypt!
 
Grits, sugar, raisins, milk, all can be combined to make Indian Pudding...absolutely delicious.

I grew up on the Gulf Coast of Mississippi. Grits are good. Cornbread is good. The things I miss though are seafood gumbo, redfish courtboullion, crawfish etouffee, smoked mullet, oysters on the half (wouldn't dare eat them now-a-days), red beans and rice every monday, stewed okra and tomatoes, fried okra.....

Yum.

I live in Northeast Coastal Florida now, so this stuff IS do-able.

I do the red beans/rice every now and again, the okra & tomatoes if I can talk someone into sharing them with me....

As for the rest...

It takes half a day to make a good roux. Who's got the time? One of the these days I'm going to take a whole Saturday and just DO it.

i would like to say hello to all ; i have quiet enjoyed reading about everyones take on grits..... and G.R.I.T.S

and if you do not mind my opinion: grits are an acquired taste just as any southern food..... me myself i prefer them with a bit of butter and brown sugar ; use less water to make them a bit more stiff and they are not that bad.... but that is besides the point . not that i have a point really but still.....

Chiggers are the sadists of the insect world. It's bad enough that they bite, but it's Where they bite that makes them so bad. I didn't spray myself this weekend and now I'm paying for it.
