I think we all should get together and safe a lighthouse restore one and have it as a little vacation get away where we all could meet and I bet it wouldnt cost to much they have a web site about getting one and saving it

Grilled Cajun Shrimp

20 medium shrimp -- peeled and devained
***CAJUN COATING MIX***
1 orange -- (juice of)
2 limes -- (juice of)
1 lemon -- (juice of)
1/3 cup dijion mustard
1 teaspoon tobasco
1 teaspoon chopped garlic
1 teaspoon worcestershire sauce
3 tbsp. dry jerk seasoning -- (caribbean or
jamaican)
1/4 cup paprika
1/2 teaspoon black pepper
1/2 teaspoon cayenne pepper
1 teaspoon cider vinegar
1/4 cup olive oil

Make the Cajun coating mix by combining the above ingredients in their given or
der. Mix well in a bowl. Preheat grill. Dip shrimp into the Cajun mix to coa
t evenly.

Place on hot grill and blacken each side (5 to 8 minutes= TOTAL grilling time).
Enjoy hot or cold with lemon. (Served 4- depending upon course)

I myself don't like to blacken my shpimp so I just lihtly grill mine till done

and this grilling sauce works on chicken, pork and beef lol

Oh, I'm easy to please, sweetie...anything Italian, BBQ'd, Mexican, Tex-Mex, Chinese. Just about everything but sushi and Indian...

I'm not a big salad-eater, but I :heart: my veggies! I like spicy foods...but not too spicy. And my latest addiction are quesadillas....can you believe I only had them for the first time a couple of weeks ago!!

I guess I need to get out more! :rolleyes:

just for you boot grrl

SHRIMP QUESADILLAS

4 Flour tortillas
1 c Shredded Monterey Jack
-cheese (4 oz)
1/2 c Coarsely chopped cooked
-shrimp or imitation shrimp
1/4 c Thinly sliced green onions
-and tops
1 tb Finely chopped cilantro or
-parsley

Sprinkle half of each tortilla with cheese, shrimp,
onions, and cilantro. Fold tortillas into halves. Pack
in freezer bags and freeze.

TO COOK: Thaw at room temperature 10-15 minutes. Cook
in lightly greased skillet over medium heat until
golden on both sides. Cut each tortilla into 4 wedges.
Serves 4.
