Phyliss will probably just think he is on guard because he is cautious, and calls him to have some food and drink after all that time.
Edit: I missed your post on page 64. Nevertheless, Phyliss just didn't noticed it then as well. After all, the cog isn't so small and Phyliss was busy with Zaehn and Tronfur, so she did not hear what Gryph said, and she still believes he is just looking out as precaution.

The boat is tied up at the moment. It was fixed for the night already, because no one was on the wheel and Skandölf can't see in the dark. But as long as DE is not here, we can assume that a few moments have passed after Gryph saw them and the boat had stopped. So maybe she hid again.
