I found this recipe while looking for other recipes that include chipotle, which is my new favorite ingredient. :)

When I make it, I will probably add some toasted pecans. Fudge just has to have nuts.

Chipotle Fudge

2 cups granulated sugar
2 tablespoons honey
2 ounces unsweetened chocolate broken in pieces
1/4 teaspoon salt
3/4 cup milk
1/2 teaspoon ground chipotle pepper
1 teaspoon ground cinnamon
3 tablespoons unsalted butter in pieces
1/2 teaspoon vanilla extract

Directions
In a large heavy saucepan combine sugar, honey, chocolate, salt and milk.
Place over medium-high heat and stir constantly for 3 minutes.

Cover with a lid and heat until mixture comes to a full boil about 1 minute longer.

Uncover and cook until mixture becomes shiny and thick about 4 minutes stirring often.

Remove from heat and stir in the chipotle pepper and cinnamon.

Place butter on the fudge and set aside to cool.

When the fudge has become tepid after about 20 minutes add vanilla and stir until fudge starts to firm.

Pour into a loaf pan and even the top.

Set aside until firm.
 
Mmmm, chipotle. One of my favorite ingredients, too. I've been putting it in everything lately, especially the canned chipotles in adobo.

I like the canned stuff, too. Since I don't use that much at a time, I took and froze the remains in an mini-ice cube tray and when they were frozen, I put the frozen chipotle in adobo cubes in a zip lock freezer bag. This way i can just take out a cube or two when I need it.
 
i love the combination of peppers and chocolate. i make a sliced steak glazed in chocolate chili pepper jelly that i love.

A brilliant solution. I get the little cans, and whenever I open them, I usually search for ways to use every bit of it within a few days, but I like your idea very much if I have some left over.

Oh! That just made me moan. Is the chocolate chili pepper jelly an actual condiment, or do you combine chocolate with pepper jelly?

Tonight I made grilled salmon w/ a bourbon glaze and veggies (carrots, parsnip, sweet potato) roasted in coconut oil. Very yummy!

I am going to use some of your precious oil for roasting when I come, baby. Sounds so damn good.

I have a jar of coconut oil in my cabinet someone talked me into buying, but I haven't used it yet. Does it have a strong taste? How high a temp can you cook with it?
