" The 2008 Copper River, Alaska, salmon fishing season has begun. But you can expect prices to be higher for this wild salmon, given a ban on king salmon fishing in California and Oregon, according to Vern Oscarson, owner of Fish Peddler East in Fort Lauderdale. Look for prices of $40 a pound.

The Alaska Department of Fish & Game predicts that the 2008 sockeye salmon catch will be about 960,000 fish; the king salmon catch will be approximately 62,000 fish. Copper River sockeye salmon average 6 to 7 pounds; king salmon average 20 to 30 pounds, with some kings going over 60 pounds.

Both species of Copper River salmon are popular with chefs and diners for their high oil content, rich nutty flavor and velvety texture. These salmon have flesh that is much darker than that of other salmon, with the sockeye possessing a deep red flesh and the king a dark orange to red flesh."

The spaghetti ones are a lot of fun. I found that the preserves softened up the icing a bit, so if you make them up the day before, just spoon it on shortly before serving. :)

1. fairly centrally located and close to a major airport
2. pretty decent kitchen with indoor grill, wood-fired pizza oven, and open to great room with large-screen tv
3. mucho privacy in a lovely pastoral setting
4. fresh local produce, eggs, dairy, and meat
5. horsebackriding, hiking, farm equipment, haylofts, bon fires, fireflies

Duck Carcass

Is there anything I can do with one? There's so much fat and juice and meat left over. I'm freezing it just in case any of you have a suggestion. Otherwise, I'll toss it.

Any good ideas folks?

I found this on one of my favorite food blogs...

Note that you can get excellent stock from the duck carcass. Put the duck carcasses in a saucepan, cover with an inch of cold water, bring to a simmer, lower the heat to barely-a-bubble-simmer covered, and cook for 3 hours. Then strain the stock to a glass jar, let cool to room temperature and refrigerate. Use the duck stock in place of chicken stock for recipes.

Oh, that was hilarious! I laughed so hard. :D Tickled my funny bone, that did.

I usually use my chicken carcasses to make chicken broth/stock but for some reason wondered if the same could be done with duck. Silly me! I think I'll do that as I've got some onions, a couple celery sticks and a carrot that are all just a wee bit bendy.

That duck pho looks great. Wish I had enough duck leftover to do that with, but I et it already. :eek:

PS: You were right - The Darjelling Limited was an odd little film, and I'm still not sure what I think about it either.

I wanted to really love this film, because I love the actors and the setting. but...I just didn't, I wound up in limbo about it.

Are pressure cookers easy to use?

I got a pressure cooker as a gift about 3 years ago and I haven't used it yet. I even have a pressure cooker cookbook to use with it. Am I just being ridiculous? Summer is coming and I've heard they are great because they cook so quickly. The stove won't be in use for long periods of time.

HA! You sound like me...I bought one 5 years ago, because it was such a great deal...it sat in the trunk of my car for 3 years, and now it has found a lovely home in one of my cabinets...but I'm afraid to use the damn thing!!

Alton Brown had a good show on pressure cookers on "Good Eats." Unfortunately all I've heard about them otherwise is when people used them incorrectly and they exploded.

The reason why I don't want to use one is not that "if you use them correctly they're fine" but the fact that if you're making lentils in it or something and something gums up the vent, BOOM.

I guess for me they're sorta like nuclear plants. They're probably awesome and solve a lot of problems. But not in my back yard.

If I don't want to think much about cooking, just use a slow cooker. No risk, tons of food, little prep. You just have to think a day ahead.

We watched that right after TDL :D I was at some movie thread and made a list. We also just saw Juno, Little Miss Sunshine, and There Will Be Blood. All very peculiar films which left us kind of just thinking "Hmmm..." It's a new experience for me to not instantly proclaim "I loved it/hated it!"
 
Recidiva: My mother always used one when I was little. I remember eating many good meals from it. She bought a new one a few years ago. I think they are safer now. Don't explode like they used to. And I wouldn't make lentils anyway....yuck hate 'em!

Oh good! Let me know. I'd love to see the results of your experiments.

I'm not sure my husband would want one as he's the victim of a lentil explosion himself. It might have to be one of those sacrifices I make for the state of harmony in my marriage.

All excellent reasons. Do we get to operate the farm equipment?
