You need the mango splitter!!!!

I bought the mango because of you and Hester mentioning the mango splitter.

I thought of you guys and I'm definitely buying more and getting the kitchen vagina.

I've determined I must have had crappy mango in the past.

I made this:

MANGO-CILANTRO RELISH

2 mangoes, peeled and diced
1/4 cup finely chopped red onion
2 tablespoons chopped cilantro

3 tablespoons lime juice
3 tablespoons fresh orange juice
Salt and freshly ground pepper

Combine the mangoes, onion, cilantro, lime juice, and orange juice in a bowl and gently mix. Season to taste with salt and pepper.
 
Over the weekend, I had two sinfully good meals.

The first was at Milestones. I had the Grilled Seafood Salad which consisted of HUGE portions of grilled dill salmon, jumbo garlic shrimp, fresh baby shrimp, mixed leafy greens, avocado, papaya and a vinaigrette dressing...oh, and those little crispy Asian noodle things. Why I can't put a name to them....sheesh.

THEN

Out for breakfast the next morning, we stopped at Cora's....it's Canadian yet folks, so you Americans are missing out just yet. I had the eggs benny but with grilled mushrooms and brie. Mmmmmm!

I knew I should have married a chef! :D

mangos are just such a damn luscious and sexy fruit! They are great warm...and even better cold, and you can use them sweet and savory...LOVE that!

The relish sounds yummy!

Buy grapes instead.

It's just that they're so slippery...and round..except I make them flat because they start out being round and I can't cut down all that well and all the good stuff is attached to the skin and..

Tonight for dinner, I'm having fresh eggplant sliced thin and sauteed in olive oil with a splash of balsamic vinegar, lightly sprinkled with a tad bit of sea salt and fresh ground pepper. I love how the balsamic brings out the natural sweetness of the eggplant. I'm also having freshly baked whole grain baguette dipped in EVOO.

For dessert, I am slicing up the most beautiful, red, ripe, juicy strawberries I've ever seen and eating them with a slice of sourcream angel food cake.

Mmm, mmm, mmm.

Hey, I have to start thinking about a retirement job here. I figure I'll make some things part-time and if I enjoy it, put more effort into it then.
