Lately, I've been using a Kitchen Aid mixer with a dough hook.
Step 1: Make sure the the Kitchen Aid is in the off position before plugging it into a grounded outlet.
Step 2: Put ingredients into the bowl and attach the bowl. Then attach the dough hook.
Step 3: Turn on the Kitchen Aid and start in the 2 position, which simulates kneading.
Step 4: After ingredients are fully incorporated, increase speed of mixer to about 4. Mix on med-high until dough appears smooth or releases from the hook easily.
Step 5: Check the dough for extensibility and elasticity. The window pane method is great for checking if your gluten structure is sound.
