Lard. Lots and lots of lard when you cook...I sprang/sprung for some really good pans for chrymas - carbon steel. They need to be seasoned so I did that yesterday.
I seasoned them with high-quality high smoke point oil. But stiff still sticks to them. I’m not giving up on them, but I’m pretty disappointed initially.
I’ll keep on reseasoning them and see how they go.
You can’t wash them, DEF no dishwasher. We’ll see.
