Sounds like a very productive evening!!

Dinner was chicken fettuccini alfredo and salad
I also made raspberry syrup for a special cocktail tomorrow and started a new jug of vanilla extract
then I prepped egg bake for our "Easter morning" tomorrow
It was a good day, yes 🙂

Mmmm nice! Chicken Alfredo is always a good option! What kind of cocktail are you making? You make your own vanilla extract?! That's awesome. So you're celebrating your Easter tomorrow? Lots of family coming over?

I do make my own vanilla extract - it's easy to do and so good!
We're just doing our family Easter tomorrow, the 4 of us. My oldest leaves for a trip early Sunday morning so we're just doing it a day early. No big family get together this year which is kind of nice

That actually sounds like it will be a very nice, quiet way to spend Easter. Sometimes the chaos of extended family gatherings can be skipped once in awhile. Plus you get that time with your daughter before she leaves for her trip. Hope you all have a great day tomorrow!

There was a lot of drama around this holiday so my SIL said screw it and we're not doing it which I fully support - I'm looking forward to the weekend!

Vanilla extract... grab a bottle of vodka and pour a little into a glass for yourself to make room for the vanilla beans... add vanilla beans. You can either split them the long way or just cut into thirds. I use 1/4 pound of vanilla beans to a 1.75 jug of vodka - I let mine sit for a year and swish every once in a while, but it should be ready to use as soon as a month

MWP's "it's better than it sounds" egg bake

Ingredients:
  • 2 cups Minute Rice, cooked according to package directions
  • 4 cups Rice Krispies cereal
  • 1 lb pork sausage
  • 1 onion, chopped
  • 16 oz shredded cheese
  • 7 eggs
  • 2 cans cream of celery soup

Instructions:
Grease a 13x9-inch baking dish and set aside.
In a skillet over medium heat, cook the sausage and chopped onion until the sausage is browned and fully cooked. Drain any excess grease.
In a large bowl, beat the eggs, then mix in both cans of cream of celery soup until well combined.

Assemble the casserole:
Layer half of each of the following into the prepared dish:
  • Cooked rice
  • Rice Krispies cereal
  • Sausage and onion mixture
  • Shredded cheese
Repeat the layers with the remaining ingredients.
Pour the egg and soup mixture evenly over the top.
Cover and refrigerate overnight.

To Bake:
Preheat oven to 350°F.
Bake, covered, for 45 minutes, or until heated through and set.

That sounds super easy! Where do you order the beans from in that volume? I wonder, could you do it in a Bourbon instead? I do love bourbon infused vanilla anything.

You could totally make extract with bourbon instead of vodka. You also don't need to make as big of a batch as I do - @Dayhoosier makes smaller amounts at a time - he might have good smaller bean to liquid ratios for you
