North Eastern family dish. Potatoes, onions, carrots, corned beef. Layered over and over. My mum used to cook it in a pressure cooker but those things scare me so I just do mine on the hob. I think it's common to use beef stock but I prefer vegetable stock. Simple, and used to be super cheap in the old days. Corned beef is bloody expensive now! *SIGHS*

Happy sigh…watching my mom being greeted by all her friends, hearing people call her from across the room, watching her laugh, leaning in as she reminds me who is who and catches me up on all the gossip, seeing all my aunties. All the hugs and back rubs and everyone commenting how beautiful my daughter is, how grown up. My mom looking so happy and beautiful.
