I made my childhood panacalty for dinner. Was looking forward to it sooo much. It was delicious. So delicious I took a second bowl. I have now overeaten and regret it.

What is panacalty?

North Eastern family dish. Potatoes, onions, carrots, corned beef. Layered over and over. My mum used to cook it in a pressure cooker but those things scare me so I just do mine on the hob. I think it's common to use beef stock but I prefer vegetable stock. Simple, and used to be super cheap in the old days. Corned beef is bloody expensive now! *SIGHS*
