What's for dinner?

For chile aficionados.

For green chile the gold standard is Hatch. Other greens have specialized uses but Hatch is still golden.

Reds are all over the place. Subtle differences from region to region. But my preference is Chimayo Red. It's a heritage chile coming from the same seed stock going back 300 years. Unique and flavorful.

Chimayo Red.

One source for the red.

What is the spice level?

Haha...got it

Used arrowroot an egg white and club soda littke salt and pepper after frying

More pork roast (I buy the 10 pounders and cut them up and freeze roasts, chops, and stir fry), bok choy and 1/2 baked Yukon gold. :)

I buy pork loin and slice for chops. I also buy pork shoulder and cut for BBQ and stuff.

I used to buy Tri Tip and do the same with it but the price has gotten outrageous so now I'm buying flank and London Broil instead. Still outrageous but the out of pocket isn't as bad per shopping trip.

$1.98 a lb at Sam's. Cheap and versatile. :)
