The time's highly dependent on the particular wine and it's age so I can't give you a number, but I know we've used many that have been in and out of the fridge for at least a month. We just give it a good sniff and a little taste, add a bit, taste the dish after a few minutes, and add more if it's good. I wouldn't hesitate to try a little in your next stew or sauce.

Yes, and they might last a little longer. If you have a vacuum sealer like a FoodSaver or Seal-a-Meal with an accessory port, you can get stoppers that will allow you to pump out the air, which is what makes the wine go bad. You can also buy nitrogen cartridges that allow you to replace the oxygen in the bottles.
