Bobsgirl, we use whites that are kept out or in the fridge for cooking often. Even if they're a little past drinking, they often still add very good flavor to many sauces and stews. The time's highly dependent on the particular wine and it's age so I can't give you a number, but I know we've used many that have been in and out of the fridge for at least a month. We just give it a good sniff and a little taste, add a bit, taste the dish after a few minutes, and add more if it's good. I wouldn't hesitate to try a little in your next stew or sauce.

someone else had pointed it out to me when i hit 1000. i knew i was close but i never really paid any attention to it.... and i couldn't tell you what it's at now, other than it's over 3k.

so, in short, i make unncessary and irrelevant posts at the same rate, regardless of my proximity to a milestone. :)
 
bingo. i don't particularly care about my postcount now that i've hit all the milestones that matter to me (av, custom title). if you're obsessing about your postcount irrespective of those things though, give it a rest: take a gander at the leader board.

Yes, and they might last a little longer. If you have a vacuum sealer like a FoodSaver or Seal-a-Meal with an accessory port, you can get stoppers that will allow you to pump out the air, which is what makes the wine go bad. You can also buy nitrogen cartridges that allow you to replace the oxygen in the bottles. There are hand pumps on the market as well, but most don't do the trick and are poorly made.

I second the point on the hand-held pump gizmos. They don't even suck well. ;)

Besides, it's far more enjoyable to relax and finish the bottle after dinner.

Edited to add that the wine-in-a-box system actually does a good job of keeping the wine fresh. If you're not hugely particular about the wine that you drink and can maintain enough discipline to keep from trying to finish the box (they average 2 or 3 liters I believe), this could be a good solution for you, bg.

Absolutely not. I never even notice my post count unless someone congrats me

does ANYONE know what "vigorish" means?

i can't find this word in the big giant dictionary that's filled with just about all the letter combinations possible in the english language. i'm assuming that it must be a regional term or something from somewhere.

HELP! PLEASE!

huh? either i don't understand what you're saying or this doesn't fly with the context in which i saw it... plus, my "vigorish" only had one "G" in it.

should i try to find the sentence that contained it?

i'll see if i can find it... it's in a book but i don't know WHERE in the book so this could take a while.

i suppose it's possible that it's being used incorrectly but i think it's unlikely.
