I completely I understand your point about texture. But if I mash a potato with butter on my plate, or I mash a potato with butter in a bowl, it’s essentially the same thing. Baked potatoes are cooked by the steam that is produced inside and trapped by the skin. A Hasselback potato is essentially a potato centipede of fried potato slices, cooked by the butter that is tucked in at every cut.
