tonight's supper was an improvisation but it came out pretty damned good and we all enjoyed it
1/4"-1/2" cubes of tilapia slow cooked&basted in butter with tarragon/lemon pepper, pinch of salt
served on top of rice that i cooked separately (adding tarragon there, too) then mixed with soft, butter-cooked and a little chicken stock added to braise thinly sliced leeks, half a jar of pimentos, onion powder, salt
with an additional asian-inspired pouring sauce that was supposed to be a soy/ginger/garlic/OJ blend; NO OJ or ginger, so i made it from garlic, soy, chicken broth and home-made marmalade!
mounded the rice using an ice-cream scoop, dished up the velvety soft cubes of fish on top, poured on some of the butter/tarragon/lemon pepper cooking liquid so it ran into the rice, too, then drizzled the pouring sauce over it.
yum! i could taste all the ingredients and there are no leftovers i can still taste the butter and hints of tarragon and orange.

Thought Iowa would fare better. Then again, not at all surprised. In 3 weeks, they'll have the opportunity to embarrass Nebraska. I've been pretty happy with their season so far, but have no hopes of them beating Ohio St. It's kind of a nice change.. At least I won't be at the edge of my seat waiting for the bomb to drop.Great day of football, interesting games. Upsets everywhere, except thank goodness, my Buckeyes.

i’m hanging in there! finishing up the final steps of a career change, and i am excited about the future. i just got my oldest off to college, and the youngest isn’t too far behind. i thought the house would get quieter, but somehow a rescue puppy ended up here not too long ago, so chaos continues to reign supreme. we also moved not too long ago, and i have a huge yard that is a blank canvas for gardening. this fall the plan is to plant a few more fruit trees and prepare beds for the spring. all of the fruit trees we brought over from the old house are thriving. needless to say there is no lack of things to keep busy with around here. life is good. i am glad you and yours fared well with the last storm.we're absolutely fine, Neci
most of it missed us, we just got a couple of days of not even heavy rain and 2 trees down on the fenceline but away from the buildings. Didn't even seem that windy, to be honest so the trees were a surprise.
when not busy doing other things, i spend most my time at Lit over on the politics board and H is either outside or busy saving the world with his game... we've also been binge-watching a few things. Got a 10 week-old kitten called Digit so now we're up to 3 indoor/outdoor cats and 2 outdoor only ones. It is enough.
