Pumpkin is fabulous.

My family gave me the title of "Pumpkin King," a few years back, after I made a string of meals that had pumpkin as the main ingredient. I used to hate it, felt like they were teasing me, but as I got older I thought I'd embrace it. Now, most of the stuff I cook has pumpkin in it, and nobody complains. Even if they wanted to, they did this to themselves

Taking a chocolate cake mix and adding in 1/2 a large can of pumpkin (that's all, no eggs or oil or anything) makes nice moist chocolate cup cakes. If you haven't tried it already, there's another one for your collection.

1/4 cup pumpkin puree mixed into the hot milk when cooking oatmeal (w/ a dash of pumpkin pie spice & a little brown sugar) makes the yummiest cold morning breakfast, evar. If you want to boost the protein content, whisk in a beaten egg the last minute of cooking.

Complex carbs from the oatmeal, protein from the egg, calcium/vitamin D/protein from cooking it in milk, plus vitamin A and vitamin C from the pumpkin.

New gig is going AMAZING. Lots of learning, lots of long hours but it feels oh so good to be productive on a full-time basis again. And I get to stay in my new corner of the world and spend more time with the beau, so it's all worth it. Yep, all that made me smile today, too.
