It’s so nice when the veggies are at their peak. Makes cooking very easy and tasty!

Today’s lunch is beet croquettes (store bought because of today-me’s schedule and yesterday-me’s laziness), fried egg and horseradish sauce.

Dinner is salmon, chanterelles and zucchini.

Yes Ma'am, I LOVE it when the fresh produce is abundant, especially the tender, straightneck yellow squash!

Still debating for today. Last night I had red pesto butter beans and it was incredible. Wanting to make something today that has some leftovers.

I might make a batch of kimchi today. Wishing I were near an Asian market to get some Korean chives.
 
I was going to mostly have a weekend to myself, but I got sick 😟.

My poor me meal from yesterday:

Because Kaiserschmarren is comfort food at its finest and edible despite having razor blades stuck in yout throat - well, at least half a plate or so.

Bit less sore today, so I might try a bit of hot and sour soup with egg drop for lunch.

Yum but I’m sorry you’re not feeling good!

Lunch was spaghetti with some leftover chanterelles and zucchini from yesterday. Just added a bit of olive oil and white balsamic on them and down the hatch.

Dinner is beet soup, eggs and horseradish.

Focaccia(-ish) is in the oven, cardamom bun dough is rising. I haven’t decided what form to bake the buns yet. I might make some with cinnamon filling as well.

Many years ago, while deep in the mountains in Mexico, I found the "village baker."
She baked sooooo many wonderful breads and pastries of all kinds (in a huge earthen, dome oven) that I lived off of for 3 days, happily!
 
Aloo gobi. The tomatoes were a lot more liquidy than I expected and now I’m desperately trying to boil out the excess. 🤦🏻‍♀️

Edit: it turned out really, really good, but the cauliflower was a little overcooked because of having to boil it down a little longer than expected. The flavor was possibly the best I’ve achieved so far. I’m glad there’s lots of leftovers!

Baked salmon and parsnips with sautéed sheated woodtuft mushrooms. Drool.
Proof of life upon request!

Somebody read the wiki article and noticed that the mushrooms are not recommended for consumption because they have a deadly poisonous look-a-like. I’m alive, I didn’t eat the wrong mushrooms. 😂

I’m pretty sure this same situation happened once before when I posted about eating a type of morels which also are deadly poisonous if not prepared correctly. I should probably stick to only posting about other mushrooms that don’t get people worried.
 
I pureed the leftover parsnips from yesterday and turned them into flatbreads. Filled the flatbreads with tomato, red onion, spinach, chorizo, yoghurt sauce and red lentil sprouts.
 
Sunday was the first day of fall, and right on time the weather turned cool-ish. We celebrated with ham and beans with cornbread. Yum.

I find it interesting how often ham is mentioned in this thread, because in my world ham only ever gets eaten in Christmas (by people other than me, because I don’t eat it even in Christmas). I don’t even know if ham is sold here any other time of the year than around Christmas. Maybe not, except thinly sliced for sandwiches?

Is the ham mentioned here the big chunk of meat or something else? 😅

Like you, we don't consume ham as a main course of our meals. Somebody does, however; there is a staggering assortment of hams, as well as other pork products available in our grocery stores. I usually cook beans with scraps of ham that are left after a whole ham is boned and trimmed.

Interesting. Pork is sold here, just no hams, as far as I know. I almost never cook pork and rarely eat it, so maybe I just haven’t noticed the hams, but I really think beyond Christmas time the pretty much the only ham you can find is the sandwich kind.


My lunch was store bought chanterelle ravioli and home made mushroom sauce to go with them. Dinner was popcorn. 😂 Film festival in town.
 
J made a really good pasta bake with leftover veggies and meat that were about to go bad. Cavolo nero, cherry tomatoes, chanterelles, beef mince, three kinds of cheese and elbow macaroni.

So many of my favorite things in a casserole! No complaints. I’m glad there’s enough to cover lunches the rest of the week for both of us.
 
Mushroom tikka masala with sheep polypore mushrooms.

I’m trying to think of a dessert I could make with the ingredients I have, because lord knows I deserve dessert today.
