I can cook. It's just that people here would soon tire of hearing about my orgasmically fantastical mac and cheese. And I don't even use the blue box stuff, either.![]()
But definitely NOT the blue box... The only mac and cheese I don't like!
Beetroot pickled been sprouts (Peter Gordon)
He recommends them on top of steamed new potatoes, tossed in salads, scattered on soup, or mixed with coriander and spring onions as a garnish for smoked salmon and other oily fish.
Makes one litre jar.
1 large beetroot, peeled
2 chopped cloves of garlic
200mls of cider vinegar ( or white wine vinegar or rice vinegar)
6 table spoons caster sugar
350g beansprouts rinsed and drained
12 allspice berries
Either grate the beetroot, or purée it in a small food processor. Place it in a pot with the garlic, vinegar, sugar, and 400ml of water. Bring to the boil and then simmer rapidly for 5 minutes.
Meanwhile fill a heatproof jar with boiling water and leave to sit for a minute on a folded tea towel. Tip the water from the jar, then place the bean sprouts and allspice in the jar, layering them.
Strain the hot pickling liquid through a fine sieve then pour as much of it as you can over the sprouts and seal while hot. Leave to cool on the tea towel, refrigerate, leave at least a day before using.

The very short leave time appeals to me......ridiculously as I have jam put up from two years ago still.I just like to taste stuff. I'd like to make more chutneys etc, but....the idea of a maturTion for three months to find out I've made something disappointing is a bit of a put off......its one of the rare times my deferred gratification fails.

I like it made with a bechemel sauce, all lovely and creamy, either baked or on the stove top. I even like shells and cheese out of the boxBut definitely NOT the blue box... The only mac and cheese I don't like!

I have never had lobster mac n cheese. The idea is very tempting.
Lobsters in UK are small. When I first saw one here as a teen I thought it was a bit of a joke..
Maine is somewhere I would LOVE to go and have not been.

I do a southwestern one that I like. It has mild, roasted, diced green chilis in it. I do bechamel of course, but with Mexican cheese blend, top with panko and more cheese bake. Sometimes I had diced ham to the mixture. Fun food.
Mac & cheese with pan-fried diced pancetta and manchego + Drunken Goat cheeses.
