What's cookin', good lookin'?

I have been brewing up a batch of chicken stock since yesterday morning. I normally let it simmer 48 hours, but it smelled so good this morning that I had to make some soup!

Also, my friend gave me a box cake mix, lemon pound cake with lemon glaze. I put off making it until the expiration date approached :rolleyes: so I made it yesterday. I made the cake according to directions, then cut it in half horizontally and added a later of jam. I used pomegranate concentrate instead of water to make the glaze, and it all came out super delicious!!

So, veggie soup with chicken and roasted noodles, tamales, and jam layered lemon pound cake with a pomegranate lemon glaze for dessert.

I'm going back to bed for a bit :D
 
We'll, that would be VERY welcome. :D. But.....I wouldn't get you for a visit too. :(

I could send you anything from here you wanted to try that would get through customs.... A local food package? That could be fun!

I do have favourites!
They mostly involve chocolate... :D

Gianbattista is cooking again tonight. :D


He enjoyed his Scottish theme last night and one of our neighbours rears Aberdeen Angus, and we have some beef from them, so G is making a couple of burgers, which he plans to serve in brioche buns ( bought not home made) and put some emmental on the burger. I suggested he tries making zucchini dipped in corn flour and fried , and he thinks he might try it with onion too. Otherwise he might make a salad.

I have not been in the kitchen even to get a drink today ( I did do the hand washing in the utility room off the kitchen though!)

Si! New av. In honor of Valentine's Day. I am all smoochies.

I saw the pic of last night's dinner and tonight's dinner sounds just as fab. Now I am hungry, despite that I just ate bacon, eggs and a cinnamon roll. Ouch.

And ...omg... fried zucchini. I love that so much.

So I want to make some mason jar salads.
I want to make them in advance - over the weekend for the coming week.
I would like to add shrimp to a couple of them.
I have some frozen cooked shrimp.
Because it is cooked would the shrimp be safe to eat if included in the mason jar salad a couple days in advance?

My intuition says yes because it is cooked and would defrost slowly in the fridge over the week.

Thoughts?
 
I didn't cook anything today, but I took a picture of one of my favorite meals to get when going out. (@ ̄ρ ̄@) Under each egg is a pork chop, a meat loaf, and then there's shredded pork... Because meat.
 
When in doubt, bake.

Beetroot dark chocolate cake with a pink icing. Fitting for Valentine's, includes beets and chocolate, allows me to bake. Check, check, check.
 
And here's the end result. As per usual, hacked up icing job. The filling is lemony yogurt filling that I dyed with beet, the icing is regular icing that I also dyed with beet.

First of all, I have absolutely no experience with mason jar salad :D so this is supposition on my part. If the shrimp is cooked and frozen, I don't think it will go bad. Cooked shrimp should be fine in the fridge for a few days without being a danger. As it's frozen, what you might run into is the shrimp getting wet and kind of... slimy? Or giving off liquid in the jar.

A couple of suggestions. Defrost the shrimp and then towel dry them before putting them in with the salad. Alternately, you could make up little portions of shrimp on the side (in a sandwich baggie or something) and mix it in at the last moment before you eat it. That way you can make up your mind at the moment you will eat it - is the shrimp good or not good?

Awesome. I have an excellent phô place by me as well, and I get some kind of tam. Beef or chicken, usually. They don't serve one with such an array of stuff on top though :( bummer!

Edit to correct - no, what I get is bun tom, noodles sprouts and lettuce with grilled meat and onions or a fried spring roll on top.
Ok, now I want that for dinner :p
