You can't make proper gravy in commercial quantities. Can't be done. Love and roux required.

I drive J crazy with the length of time it takes to build my roux.

I just tell him he can go to Denny's and ask for their wallpaper paste or just be patient. It will be worth it.
 
I make a mean SOS. I can’t stand it out anywhere.

Mine has the right amount of heat (spice).
 
I don't have an answer for that. The time demands would make cooking to order all but impossible. I guess one could make a skillet full, and serve it till it's gone. Point is, gravy made from a mix can't compete.

Sounds like I will have to find a diner down south that has a really big skillet if I'm to get some proper sausage gravy.

I presume we are talking about creamed chipped beef here? Haven't had any in decades.

I have been known to throw down a big spread for breakfast but never in my current tiny kitchen. Could be a challenge.

Pretty sure both of you know this reference only because you took History of Rock and Roll in high school, right? I, on the other hand, was an actual high school student when I first heard about the acid white rabbit on Top 40 radio.

Far talked up tequila sunrises so much that J made us one while I finished up the brats with peppers and onions.

Now I'm too full to clean up the kitchen. It will have to wait a bit.
 
I've been on a kick lately trying to learn more about regional hamburgers and cheeseburgers. I've had In and Out, Shake Shack, Whataburger, and Friendly's among the regional chains and a few locally-famous butter burgers up in Wisconsin. Would love to try some of the other regionals in their natural habitat but travel seems to be a helluva lot more daunting and dangerous right now than I like.

Who's had some experience with regional burgers? I ask in part because Chicago doesn't really have a local style and I love all foods local.

Best burger and root beer I ever had was at The Spot Drive-In in Kenosha. They make their own root beer.

There used to be a chain in OK called Sandy's that was bought out by Hardees. Of course I grew up on Sonic burgers and A&W. I love Carl's Jr. French fries. They're different because they are extruded so they become really crunchy out side and soft and buttery, creamy inside.
 
A good burger would be wonderful right now. I tend to prefer a local place over a chain. There used to be a great place not far from my house for a good diner type burger. There are a couple of places a few towns over that season their burgers well.

What regional differences have you found with your burger research, MWY?
