Rambling Rosie's Retreat

It's all balance isn't it? I'd love to have an adventure sometimes but after a busy week usually the biggest decision I want to have to make is what to cook.
I cook all the meals at home - it can get quite tedious. I'd love the opportunity to not even worry about tonight's tea.

Yeah same. It's just me. I started doing Hello Fresh which helped reduce the meal planning side of things but still I'd love to have even one day off a week
I tried the Hello Fresh thing, but with my strict diet, didn't have many options to choose from.

Oh that's a shame. My mam was interested but couldn't do it as there was no way to safely guarantee the ingredients would be gluten free because they come from so many different places.

Is there anything like that for specific dietary requirements? If not there should be really

I'm allergic to alot of food, so if the dish had alot of spice or more than 3 ingredients, I couldn't get or wasn't interested. What I did try was great. Last week was the burgers with salad and a pasta dish. But for the price and such, sadly yeah not worth it. Gave great ideas for meals though. I will admit.

That must be really hard for you having so many allergies

My geography is not great. Is that a long journey?
It's a 5.5 hour drive. However, because it's one time zone to the east, if we leave at 8am, we don't get there at 1:30pm, but at 2:30pm. We do get the hour back on the way home, which is nice. It's about an hour by plane. We basically take off and land at the "same" time.

I did Blue Apron for a few years. And one called Marleyspoon that Martha Stewart did a partnership with.
I liked to cook well enough, but would get overwhelmed when it was time to meal plan. I'd look through cookbooks and online and would get overwhelmed by all the options and/or concerned that I wouldn't be able to find some ingredient that a recipe called for. The meal kits solved both those problems for me. I also learned some new cooking techniques and worked with ingredients that I wouldn't have necessarily tried on my own. Like @Wriggleitlady, I kept the cards for the recipes that I liked. I use those recipes once or twice a week now and occasionally brave the cookbooks and internet for new recipes.

I'm constantly forgetting just how enormous the states are. That's so cool that you can do a kind of time travel though 😊

Yes getting overwhelmed by how much organising, thinking, checking planning... Sometimes it's too much. The recipe cards are so simple and, for someone like me, having individually measured portions of everything really takes the stress out of it too.
Of course there are days when I'm relaxed and have time and can just enjoy throwing something together but lately I've needed the comfort of all the brain work being done beforehand.

Sorry for the late reply Ang. I've had a crazily busy week.

So I have something fun to share (for a change - you were all thinking it! 😂)

Yesterday I finally met my date. After weeks of both of us rearranging due to various illnesses and poor planning we were both free yesterday.

The advantage to the delay though was that it gave us a chance to chat a bit first through messages so when we did finally meet I wasn't wracked with nerves.

It went pretty well. Had a little bit of fun 😏 and fingers crossed we can meet up again!

This is such great news. You were supposed to meet up way back at the beginning of August.
So the "bit of fun" - Was the "UP" photo taken by your date?

It wasn't actually but I was wearing the same bra yesterday..

I did that pic myself trying to change the angle from the standard "squeeze them together" pose that's become my go to 😂

Well it made my day.
Are you going to send it to your date? - I'm sure it'll make their day, too.

Maybe.
Ok probably not. I'm super self conscious really. But I'll keep it in the archive and see what happens.

Glad you liked it ❤️
I'm kind of annoyed with myself for not making it my 3000th post. I was off by one 🙈
I'd done a pic to commemorate the 1 & 2000th posts but this wasn't planned in advance like they were. Still like how it turned out though

Interestingly though, that means your 3000th post was wishing for an empathetic crush.

What were your 1000th and 2000th celebratory posts? I wouldn't have been here.

They've both "poofed" now but if there's a good theme one week in Variations I might re post them.

Oh that's cool. Yeah empathy is important. A good heart and an ability to see another's perspective. The date guy does seem to be like that but we're all on our best behaviour at first so who knows.

Yay for the date going pretty well, having a bit of fun and I will also keep my fingers crossed for you for another meet up.
