I've been seeking out reasons to make cornbread. A month or so ago three of us in the house all bought cornmeal thinking we were out......we weren't even out so now the pantry has like sooooooo much cornmeal. So just give me a reason!

I would be baking cornbread muffins and freezing them.

Some with cheese and jalapeños. I've never had them, but it sounds good right now.

Cornbread is one of my main food groups. I never need a reason...but if you make ME cornbread..well..it can come with some good things.

Cheddar and jalapeno cornbread muffins go excellent with chili.
I'm a honey cornbread girl myself, but I love a good cheese and jalapeno cornbread.

I've made a strawberry cornbread dessert before. Put a bottom layer of sweet cornbread batter in your baking dish, dice up some strawberries with sugar and lemon that have sat for a little bit, put a top layer of batter, marble it a little bit with a toothpick..then serve with either whipped cream, extra strawberries and a drizzle of honey or with vanilla ice cream. It's SO good.
