It's a classification problem. My guess is that there is no "Chinese" classification due to the wonderful oversight of our benevolent Xi Jinping. There's probably an "Asian" category that is visually appealing to this sector of the population and for the sake of clean data visuals, they merged all Asian categories into "Japanese".
