I decided on a test batch...
I made 8 cookies and still have a little more than half the dough left. I like smaller cookies.
I'll tweak the size and cooking time a bit but these are yummy.
Slightly crisp on the outside, soft and chewy insice... and a pleasant taste of ginger that keeps increasing and building even after the cookie is gone.
Did I mention I added more dry ginger, too?
They look flat as a pancake because the photo was taken from above, but they're thicker than they look.
I took a side view with a mustard and ketchup packet for scale.

I'm going to make fresh ginger tea from real ginger root in a minute... then heat up some homemade mushroom soup from my freezer.

While my ginger is out, I'll grate some extra to add to ginger cookies. Add a little extra zing to the dough.

I love Ginger Tea with honey and lemon. Sometimes I add turmeric.

Breakfast today will be Hot Bananas: pan fried with butter, honey and caramel sauce!
On toast.
Bacon is an optional extra!
Great way to start the day before two hours of pickleball, followed by two hours of padel.

Dateline: Asbury park

Fun night of drinkin and rockin and rollin. Rolled into town and hit the WonderBar for amry/navy. The staff were great… they normally kick people out at 6 for the 7pm show. But I was wearing my first cav hat and the waiter and bartender recognized it. Bartender was Air Force vet. They let us stay and watch the football game. Two bars came on and did sound check - both good.

Then we moseyed to the Stone Pony. Jesse Malin fuckin brought it. His band is so good. Imagine Americana music with a few dashes of punk rock sensibilities. He was stricken w a rare spinal stroke and can no longer use his legs. He is able to stand and sit but can’t walk. They literally carried him on and off the stage.

He’s a helluva songwriter and story teller.

Met a bunch of lovely people. Drank too much.

Hungover.

Sounds like a wonderful night!

I really like the change of seasons. And most years I don’t mind the lower light as much, but this years been rougher.

But I could see living in FLA or ARI for the months of January and February…
