I keep seeing people making gin cocktails with elderflower tonic... does it make that much of a difference in taste?
100%. Elderflower (especially in the form of St. Germain) is like bartender's ketchup. It forms a good base for a lot of cocktail variations and magickally makes thing blend together.

It even works in the Bramble... I still prefer the OG tho.

Interestingly, it melds really well with egg white in foamy cocktails. Think Clover Club. Sub in blackberry syrup and you have The Black Clover.

You need to secure your pantry door better! Didn't they just get into it and eat a bunch of raw pasta and rice or something?
